We sell canned albacore tuna processed in small batches at Pelican Packers micro-cannery in Bellingham, WA. All of the natural fish oils of the fish are retained.

I (Judy) am still wobbly from a full hip replacement and won't go fishing this year. FB 'memories popped up today reminding me of my post on July 16, 2013:
"We planned to leave port and go out to sea this evening ... then reports came in of water/wind so wild boats were having poles broken off, gear washed from the deck, windows blown out, one captain flung from his chair and crashing against something so hard he says he's too hurt to continue fishng this year ... and these boats are bigger than ours.
"Our friend Rick came by and reminded us 'we are now in the Mosquito Fleet' (smaller boats) and so don't have to put up with that!

Don't drain that tuna!
I will be SO glad when food editors, bloggers, and writers come up to speed with quality albacore tuna!
Their recipes usually start out with 'drain the tuna.' Why? Because the writers are discussing tuna that have had natural oils/juices baked out of them and have had water, broth, or vegetable oil added back in to bring moisture (and weight) back into the product.
Our albacore tuna is a chunk of fish. That chunk could be barbecued, baked, fried, or whatever. You wouldn't squeeze out that oil, would you? We chose to can that chunk of fish and that same oil is in the can. Don't drain it. Mix it back into the chunk of fish.
Our canned albacore tuna weighs approximately 7.5 oz or 3.5 oz. If you weigh it and the oils in the can, you will find very close to that weight. 7.5 oz is almost half a pound of fish; 3.5 is almost a quarter of a pound.
Drain a 6 oz (now 5 oz) can from major brands that has water, vegetable broth, or vegetable oil added and you will find a lot of that 5 oz has disappeared down the sink.

We've been filling Christmas gift orders the past week or so. One lady bought some for stocking stuffers. What a great idea! FedEx says if we ship on Monday it'll get to VA by Saturday ... fingers crossed!

We were very lucky when the tsunami reached the coast. Our boat (EZ1) is moored at the Port of Ilwaco at the mouth of the Columbia River (between OR and WA). The surge there was minimal and did not destroy anything.

Harvey & Judy pull 12 barbless hooks behind the boat. The hooks are attached to jigs, which drag from a few feet below the surface of the water to right on top of it. When a fish gets on the jig, the line goes tight and rings a bell. Harv goes into action pulling in the line. Koko the African Grey parrot usually yells out 'Fish on!" Judy casually scans the back deck to see if she's needed .... :-)
