grounded in French & Italian traditions, our seasonal menus showcase Colorado ingredients in fresh, creative, and thoughtful ways. The restaurant was conceived and developed by Pete Ryan, the owner/executive chef of the plimoth. Located at 2335 E. 28th Ave on the corner of 28th and Josephine, the storefront property was built in the 1920’s and has been a local staple ever since. The restaurant has

been completely remodeled by the plimoth team with the help of local craftsmen of the North City Park neighborhood. The layout of the plimoth is small yet spacious and can host 40+ seats including 15 bar and counter seats inside with an additional 25 seats on the brick patio. The décor is very rustic with lots of natural light, exposed vintage brick, reclaimed fir countertops and an original drugstore tile motif. Restored streetcar rails from the old 28th street trolley system act as footrests along the bar and counter, further tying the restaurant to its original roots.
‘I have lived in the area for over a dozen years and like many folks around here, I was patiently waiting for a neighborhood eatery to open. One day I decided to stop waiting for change to happen and instead decided to be the change”. -Chef/Owner, Pete Ryan. Aiming to be a culinary escape in an up and coming area, the plimoth will be inviting to both locals in the neighborhood as well as those from around Denver who are looking for a relaxed and comfortable dining experience. Focused on using local, sustainable and seasonal ingredients, the chefs at the plimoth will play off familiar farmhouse fare with a contemporary spin. Expect to see interesting menu items that embrace Colorado raised proteins, market fresh fruits and vegetables, and herbs from the plimoth’s large brick patio garden.

Our chefs draw from foundations in classic French and Italian cuisine, finding inspiration in seasonal and local ingredients that offer a modern twist to each dish. The fully stocked bar will feature an eclectic yet approachable wine list, a rotating selection of Colorado draft beers (as well as many small batch bottled beers!), and focused cocktail selections that will match the season and the offerings of the day.

A Summer Evening on the French Riviera

This July, we're returning to the sun-soaked flavors of the Côte d'Azur.

Close your eyes and picture sparkling blue water, winding coastal roads, bustling seaside markets and colorful villages perched on the rocky terrain
of the Mediterranean.

Feel the salt air on your face as you wander through Cannes, Nice, or Saint-Tropez... before settling into a long, leisurely dinner with good friends, great wine, and nowhere else to be.

That's exactly the feeling we're hoping to capture at this month's wine dinner.

Chef Pete loved taking culinary students to France and Italy in his past life as an educator because he watched those trips unlock a passion in them that they would bring back to the rest of their careers.

Our team has created a multi-course menu celebrating the region's freshest flavors (from the sea, the garden, and the market) each course thoughtfully paired with wines that feel right at home along the Riviera.

No passport required.

Slow food is the opposite of fast food and our Joyful Dinner event with Slow Food Denver (https://www.slowfooddenver.org/) was a huge success.

Huge thank you to Lilly Steiner, Emily Steels, Gabriella Wan, Nikki Knaddison, and Slow Food USA for the opportunity to gather as a community. We heard a lot of talk about the importance of transparency and how "organic," "local," "sustainable,” and “farm-to-table” have become empty marketing buzzwords.

You may have heard of the Slow Food Snail of Approval. Snails are known for their slowness and chef pete has plenty of escargot jokes like "Look at that S-Car go!" This award is based on six key areas: sourcing, environmental impact, cultural connection, community involvement, staff support, and business values.

Bubbles & Bites
Wednesday, June 24th
5:30 pm - 7:00 pm

Join us for an evening of tapas-style dishes paired with a few different sparkling wines. We'll come together as neighbors, swap stories, and celebrate the people and places that nourish our community.

This simple, bite-sized event is perfect for folks who have never tried the plimoth before and want to see what we're all about.

Huge thank you to our local chapter, Slow Food Denver (https://www.slowfooddenver.org) , for all your help organizing and promoting these events here in town.

Space is limited and reservations can be made by PHONE ONLY.

We can all do more to be intentional about how we source ingredients and value the hard work of the hands that feed us. But it's okay to start small. Every bit counts.

RIP Carlo Petrini

On a sad note, the founder of the global slow food movement Carlo Petrini recently died. His vision helped transform the way millions of people think about food, farming, and community.

Originally from the Piedmont region in Italy, Petrini was also admirably humble. He made a name for himself protesting the arrival of McDonald’s with bowls of pasta. What an absolute legend.

His activism started in Asti when he learned that local farmers were growing tulips for the Netherlands rather than their signature peppers according to his Washington Post obituary (https://www.washingtonpost.com/obituaries/2026/06/06/carlo-petrini-who-launched-slow-food-movement-dies-76/) .

In later years, he was concerned with how society fetishized food, arguing in the Guardian (https://www.theguardian.com/environment/2009/feb/04/slow-food-carlo-petrini) back in 2009: "We must normalise food rather than put it on a pedestal far out of reach." If anything, social media has intensified this disconnect.

Ages ago when he was in Italy, our very own chef pete tried the McDonalds in Asti and can confirm it's as mediocre in Italy as it is anywhere in the world.

But maybe that's the appeal of fast food? Either way, we'll choose slower to go farther any day.

we’re hiring!

typical week: we’re open weds-saturdays + 1/2 day tuesday for prep and chef meeting. we go to the farms saturday mornings.

as you know, it changes every day... but expect lots of green and seasonal menu items you know and love.

think ramps, morels, pea shoots, over-winter spinach, spring onions, fiddleheads, snap peas and more. for the carnivores: spring lamb loin, halibut pave, and our cracklin' chicken

for the vegetarians we have yummy a chickpea 'panisse' cake with everything green!

if you're looking to book our semi private dining room, be sure to make arrangements at least a month ahead. that's when general reservations open up.

chef pete’s no spring…. onion. but the farms are poppin’ and boulder market just started!

we didn’t get much of a winter, but we welcome the green of spring… spring onions, over winter spinach, and lots of greens.

still a couple of weeks away for radishes and hakurei turnips though!

halibut season just started on the west coast and the pacific northwest supplies us with ramps (wild, garlicky leeks) and fiddleheads (young, unfurled ferns that taste like asparagus) from deep in the woodlands. morels are just around the corner too.
