The year has a dark half. In Celtic tradition, Samhain marked its beginning. In the Taoist Five Element framework, this moment is the transition from Metal to Water, from release to inward depth.

A tea ritual to honor both. Save it for Halloween night, or for any quiet evening around the turn of the season.

Shou puerh is one of the most widely drunk teas in the world, and it was invented in 1973. Here’s the story of how a controlled fermentation process at a Yunnan tea factory created an entirely new category of tea, and made aged-tasting puerh accessible to anyone who wasn’t willing to wait decades for sheng to mature.

Of all the ways to brew tea, gongfu asks the most of our attention. Every variable is in your hands, and over time you start to notice what each one does to the tea. In Metal season, as the year turns toward refinement, it’s a lovely practice to come back to.

If gongfu has always felt a little intimidating, you don’t need much to begin: a small pot, a few cups, and some unhurried time at the table.

Comment GONGFU and we’ll send you our beginner gongfu class, so you can learn the method and brew along at your own pace.

The word gongfu (功夫) means skill that comes from time and practice. In tea, it describes the art of refinement, the slow and attentive way of brewing that lets the small details of a session matter.

The style originated in the Chaozhou region of southern China in the 1700s. Families brewed strong tea in small clay pots and poured it into tiny cups, sipping slowly throughout the day. Tea was shared with whoever came through the door.

What we love about gongfu is that it slows you down without asking you to. The small pots and short steeps give you many pours instead of one. Each pour is a chance to come back to the tea and notice something new.

For puerh specifically, this is the method that lets the tea do what it does best. Puerh changes across many infusions. The same tea tastes different from pour to pour, which means a single session can hold many different experiences. That is what gongfu gives you access to.
