Wednesdays are one of the most chaotic days of the week (boy, do we miss those). It’s half-priced pizza day, which requires skill, speed, and the ability to put out a lot of fires all at once. (Figuratively, not literally—we’re still dealing with the literal fire. 🫠)
Fortunately, Tina is always there to help us. Our go-to person. Our utility player. The one who wears many hats—and somehow looks good in all of them.
Whether she’s jumping behind the bar, helping out on the floor, answering phones, or keeping the rest of us from completely losing our minds, Tina does it all with a smile.

Who are you - how long have you been here and what are your main responsibilities at Cside?
✨ Tina. 14 years. Someone once called me the Chaos Coordinator and I think that fits.

2. What have you been doing to keep busy since we’ve been closed?
✨Since the great countryside fire, i have been trying to keep myself busy. I’ve been bartending at a country club for events, and I actually signed up for Uber Eats, not crazy about doing this 😜 I’ve been trying to keep in touch with everyone. I feel like I have a severe case of empty nest syndrome.
And… I became Miss T.
A name given to me by the girls soccer team. I am the team fun mom/assistant assistant coach/chaperone/cheerleader, etc. I never thought I’d be a pseudo soccer mom!!!

3. What have you been missing since we’ve been closed?
✨I miss my countryside family. Period. They’re the family we all chose to be a part of. Even the customers.

4. What is the first thing you’ll order when we reopen? I want a Ruben with extra 1000 island on toasted French bread and a side of sweet potato fries with honey mustard.

Her “people” — Eddie Numbers, Walker Joe (because are you really a bar if your customers don’t have nicknames? 🤔), Rocky, Gary, Kris, Wags, Sue, Leslie, Tim, and too many more to list — would be there talking about the weekend, the Cubbies 💙, or what’s happening in Des Plaines.

Yes, they all love Countryside, but let’s be honest… it’s Joyce they come to see. 😍

Who are you and how long have you been at Countryside? What are your main responsibilities?
✨I’m Joyce. Been bartending (mostly days) at Countryside for 16 years.

2) What have you been doing to keep you busy since we’ve been closed?
✨ Doing: stocking up on bar snacks for our reopening, I hope soon. 🙏 I also took a vacation to the Grand Canyon, Bryce and Zion Canyon with many stops along the way… went star gazing in Bryce and saw the moon and stars formations thru a professional telescope…Amazing❤️

3) What have you been missing since we’ve been closed?
✨I miss my regulars who have also become friends… We are keeping in touch. Cannot wait to see all of you soon so we can all catch up and once again enjoy the vibe and awesomeness of the Countryside Saloon… and when we reopen, Mario , we hope you come to lunch! ❤️

4) What is the first thing you’ll order when we reopen?
✨ Tuna salad, it’s the best and pizza—sausage crispy with xtra cheese please!

Confessions of a small business owner…

One minute you’re running a busy restaurant/bar—ordering inventory, booking bands, seeing your regulars, greeting new faces—and the next, everything stops.

While we’re incredibly thankful the kitchen fire wasn’t worse and no one was hurt, closures like this still come with a cost. Financially, of course, but also personally. We miss our staff, our customers, and the daily chaos that made Countryside feel like home.

It’s a little scary thinking about rebuilding again, but if there’s one thing we know, it’s that we can do hard things. We’ve built something we’re proud of, and we’re beyond grateful for the loyalty and support you continue to show us.

We’re working hard every day and getting closer to reopening. We can’t wait to welcome everyone back. ❤️

On any “normal” Saturday, you’d be pulling into the Countryside parking lot right about now. Walking in, you’d see a familiar smiling face — James behind the bar, serving up some fancy and not so fancy drinks. 🍹🍺

It’s still going to be a couple more Saturdays before we get back into that routine, so for today, here’s your James fix. Enjoy! 😉

✨I’m James, I’ve been bartending at countryside for 15 awesome years.

2) What have you been doing to keep yourself busy since we’ve been closed?
✨During this unexpected time off, I’ve been focusing on going to the gym, eating healthier and spending time with my people. Also got to see my baby girl graduate 8th grade! Can’t believe I have a high schooler now! 🎓

3) What have you been missing since we’ve been closed?
✨Pizza… for sure pizza!
But I just miss working! After 15 years, I don’t even know what to do with myself sometimes. I miss making everyone’s drinks, laughing and eating everyone’s pizza at the bar 😂🍕

4) What is the first thing you’ll order when we reopen?
✨PIZZA, DUH! 🍕🍕

Kitchen reno is moving along and we’re still hopeful for mid-June pizza and bar opening. 🤞🤞 Everything has been ordered and everyday it’s starting to look more and more inhabitable. ✌️🩷🍕

So while we (try to) wait patiently for that day, it’s been fun to learn what our people have been up to—and APRILLE is up next! ✨💕

1) INTRO:
✨Hi, I’m Aprille and I bring the May flowers-unfortunately, you’ll just have to wait to see them till June. I’ve been at Countryside for a little over 5 years and in that time I’ve worked very hard at being the official Beer Taster of Countryside. I make sure customers like what they’re drinking and drink what they like!

2) What have you been doing to keep you busy since we’ve been closed? ✨I’ve really been enjoying being present for my two boys who love me screaming at the side lines of their games. I’ve also been revisiting my Marriot Theatre friends wherever they need extra hands.

3) What have you been missing since we’ve been closed?
✨I’ve been missing the vibes of live music on Friday night! They’re electric and contagious and need to be shared with the Countryside Fam!

4) What is the first thing you’ll order when we reopen?
✨The first thing I’ll order when we open is the Fried Chicken! Whether on Sunday with some mash, corn and gravy or with a salad or soup, I’M NOT SHARING😝!

I’m Marnie!
This month is my three year anniversary at countryside! 🎉
I’m a full time server at cside. I was hired to bartend and serve but realized quickly, how much more I enjoy the other side of the bar!

2) What have you been doing to keep yourself busy while Countryside has been closed?

This time away has been tough but you gotta do what you gotta do to keep busy! Sooooo… I adopted a kitten and have been giving him alottt of time and energy! Just enjoying some home and loved ones time. One day at a time, this will all be over soon!

3) What have you been missing since we’ve been closed?

Without a doubt, I miss our amazingggg customers. My amazinggggg regulars. I never take that for granted and this time away has been really hard difficult and I truly miss you all. However, they say distance makes the heart grow founder so before we know it, we’ll be back together again! 🥂❤️🍻

We’re coming up on our 38th year and, other than COVID (and even then we were “essential workers” and stayed open 😉), we’ve never had an extended closure… and honestly, it’s killing us! 🥲

But there is a light at the end of the tunnel. A VERY long tunnel, but we see it. 👀Inspections are completed. Walls are closed up. Equipment is ordered. 🎉

We may not have a full menu right away, but we’re hoping to fire up the pizza ovens again by mid-June! 🙏 It won’t be long before we’re seeing your smiling faces and our family is back together again.

Until then, enjoy those bars and restaurants you’ve been dying to try… and when the time comes, come back home to us. ☮️🩷🍕

Our grief is heavy today. 💔

The heavens got a little brighter when Ally — our quirky, sassy, loving, beautiful soul — joined them 🥹. We were fortunate to have Ally as part of the CSide family for six years. Not nearly enough time, but so thankful for the time we had. Rest in love and peace friend. 🩷

t’s hard to believe it’s been 23 days since the kitchen fire temporarily closing Countryside. Honestly, it feels more like 23 years. 😩

We finally got some good news and the go-ahead to kick it into first gear for the complete remodel of the kitchen. Now we’re just waiting on some equipment… which apparently likes to move at the speed of cold cheese. 😂😭

But here’s a little glimmer of hope ✨: we’re hoping to reopen by the beginning of June 🤞 — even if it starts with just pizza and drinks.

Today is one of our favorite traditions at Countryside Saloon, and we’re definitely missing all of the families, the champagne and flowers, the live music, and of course, your favorite Mother’s Day menu items.

Well… we wish this update came with a pizza in hand, but here we are. 🍕

After taking a closer look following our small kitchen fire, it turns out we need a little more time than we originally thought. While we were aiming for a Tuesday comeback, we’re now looking more like mid-to-late May.

We know, trust us, no one wants to get back to slinging pizzas and pouring drinks more than we do.

Right now things are still a bit fluid as we work through everything, so timelines could shift. We promise to keep you in the loop every step of the way right here and on our website.

In the meantime, thanks for sticking with us, checking in, and craving our carrot cake (we see you 👀).
We’ll be back before you know it, better, refreshed, and ready to make up for lost time. ✌️🩷🍕

Hello friends!

Update from the kitchen: we’re making great progress and feeling very lucky things weren’t worse. 🙌 While we’re still working with limited space, we figured…why not make the best of it?

We’ve got FOUR fresh carrot cakes that we’d rather share than freeze 🍰—so we’re giving away slices (max. 2 per customer) until they’re gone! That’s 40 pieces total! They won’t last long. 😘

Swing by tomorrow (Friday) between 12–2 PM, pull up out front, and we’ll bring your “golden ticket” treat right to your car. 😉

First come, first served…because nothing brings people together like a little unexpected cake!

We know there’s been a lot of chatter and some news reports, so we wanted to update you directly—everyone at Countryside is safe, and that’s what matters most. ❤️

There was a small kitchen fire, and we’re currently working through some ventilation issues. Because of that, we’ll be closed temporarily with hopes of reopening soon ready to serve up your favorite pizza and drinks.

We’ll keep you posted here and on our website with the latest updates.
