Meet Lily, our newest bartender, and her first cocktail on the menu, Vert Glacé!
What inspired this cocktail?
âInspiration came from the viral Dubai chocolate â a rich cocoa, creamy pistachio, and delicate phyllo â paired with my love for green chartreuse. I wanted to explore how those flavors could come together in a rich winter cocktail, offering a new take on a trending profile while staying true to classic cocktail balance.â
Why the name?
âThe name Vert GlacĂ© means âIced Greenâ in French. Itâs inspired by the classic cocktail Vert Chaud, or âHot Green,â which is essentially chartreuse hot chocolate. Since this cocktail is a cold, clarified version of that classic, Vert GlacĂ© felt like the perfect fit.â
Where did your cocktail journey begin and how has Bar Virgile shaped your knowledge?
âI started bartending in Boston about six years ago. From country clubs to taco joints to James Beard recognized bars, every place shaped my approach. Being at Bar Virgile has pushed me to deepen my knowledge of classic cocktails, connect more with the Durham community, and learn from incredible coworkers and regulars alike.â
