Gnudi is the poetry of pasta. A guest once told us they’d never heard of it before, and we loved that, the chance to watch someone fall for something so simple, yet not so ordinary.
Lighter than gnocchi, richer than dumplings. Gnudi means “naked” in Tuscan dialect, no shell to hide behind, just ricotta, bare and unhidden.
Chef Patrick makes them from scratch, one pillow at a time. Dinner begins at 4PM tonight. The wine is already chilling. The garden is holding onto the last light before twilight.
