Crunchy, light, airy, thin… what other adjectives can we use to describe our dough?!

Our dough recipe is years in the making and we feel like it gets better every week. We use New England flours, Sicilian sea salt, and a dash of extra virgin olive oil to create that crunch.

Want the recipe? Check it out below:

-100% flour (75% King Arthur Sir Lancelot, 25% Ground Up Grain Bread Flour)
-65% water
-3% sea salt
-1.5% extra virgin olive oil
-12.5% poolish (equal parts flour and water with a pinch of fresh yeast)
