Pancake Batter:
Dry:
-2 ½ cup all-purpose flour.
-3/4 cup minus 2 T granulated sugar.
-1 tsp. kosher salt.
-1tsp. baking soda.
-2 tsp. baking powder.
Wet:
-1/3 cup sour cream.
-3 eggs.
-1 pint buttermilk.

-In a mixing bowl combine the dry ingredients and mix thoroughly. In a separate bowl whisk wet ingredients.
-Make a well in the center of dry ingredients. Add wet ingredients to well.
-Whisk to the point where you can’t see any dry flour in the mix, but not so thoroughly that the small lumps are smoothed.
-When you have a wet, slightly lumpy batter, you’re done. Cook for about 3 minutes a side on a buttered griddle or in a buttered non-stick pan. Add maple syrup and chow down.

For Ricotta pancakes, add an extra third of a cup of flour to the dry mix and half a cup of ricotta cheese to the wet mix. Fry it up. Now top pancake with lemon curd.

Lemon Curd:
-1 ½ sticks of butter (12 Tbsp).
-zest of 1 lemon.
-1 cup lemon juice.
-1 cup sugar.
-8 beaten eggs.
Add first 4 ingredients to a small pot and heat until butter is melted. Reduce heat to low, and slowly whisk eggs into butter mixture. Do not allow to boil. When the curd is a sticky paste,
you’re done. Good job.

Shockingly awesome music this weekend-- We've got Amethyst friday night. Saturday night: a double bill with Don Henson and Glenn Peterhansen. We've also juist made meatballs and marinara for sandwiches. Oh yeah-- and orange/pineapple cake will be available for those of you with good taste.
