Edison’s Ice Cream in Greeley Opens in Historic Salzman Shoe Building

For the July 2026 installment of Every Sign Has A Story, DaVinci interviewed Julianna Follon, The Director of Business Development for Edison’s Ice Cream.

Edison’s is a concept created by Nate and Krisanna Frary, who are long-time franchisees of Dutch Bros Coffee (10 locations). “Dreaming up the vision for Edison’s went on for five years,” says Follon, “The Frarys wanted a classic old school feel for an ice cream shop, and the name Edison’s was chosen because it fit into this idea.”
The first Edison’s location opened April 2025 in the old Northern Hotel building, which dates to the late 1800s.

The Greeley location just opened this month in the old Salzman Shoe building. Both locations owe their style to the same design group, ROSI Design Studio of Windsor, run by mother-daughter pair Audrey Johnson (daughter) and Shannon Larson (mom). ROSI described the look as “designed with nostalgia, warmth, and retro elements. Each location is a nod to the community and its history.” There are paler, cooler hues for the interior signage, with the classic yet vibrant yellow Edison’s exterior wall signs for both locations.

In another character-adding twist, the original Salzman Shoe neon sign, which was originally painted red and with red neon, was refurbished by DaVinci Sign Systems and installed inside the Greeley location, and the original awning was restored. Originally founded by John and Elizabeth Salzman, and eventually run by Robert and Sally Salzman, the Greeley business was started with $500. The Salzman Building, at 911 8th Avenue, was built in 1906, but it appears that the shoe repair company began operating out of the building around 1935. Due to Sally Salzman’s retirement at 81, the business closed in 2017.

In both locations, a great effort was made to pay homage to the history of each building. At the Fort Collins location, at 172 N. College Avenue, there is a timeline signage element in the interior noting the history of the building. DaVinci has been honored to take on the fabrication, refurbishment, and installation of the signage for both buildings.

“We have had a great experience with Larry White and the professionals with DaVinci. They have helped with meeting the set forth design parameters, cross checked the historical society requirements, and enhanced the general aesthetics,” said Julianna. From fiery heat to frozen treat. 🔥

If you’re wondering how we infuse the distinct toasted flavor into our Limited Edition Campfire S’mores Ice Cream, it all starts with hand-roasted marshmallows. After the roasted marshmallows are blended into a creamy base, handmade graham crackers are dipped in chocolate and chopped, then folded into the ice cream alongside soft mini marshmallows. 🍫

Although it’s one of the most labor intensive flavors for our production team to craft at Edison’s Creamery, one bite of our Campfire S’mores Ice Cream will take you back to a simpler time of enjoying a nostalgic fireside treat. 🏕️

The ultimate summer mash-up: beer-inspired ice cream! 🍦🍺

We’ve teamed up with our friends New Belgium Brewing - Fort Collins to bring you a new limited edition lineup. Inspired by New Belgium's signature craft brews, we've created two unique and complex flavors.

Drawing from New Belgium's classic grapefruit paloma, Dominga ice cream is made with a grapefruit and lime-flavored base. A swirl of homemade grapefruit curd adds a tangy twist. (Does not contain alcoholic beverage.) 🍊🍋‍🟩

Transatlantique Kriek features a tart lime base that's complemented by flavorful bursts of homemade cherry jam, just like the signature notes of New Belgium's cherry lambic sour ale. (Does not contain alcoholic beverage.) 🍋‍🟩🍒

These two flavors will debut TOMORROW at New Belgium's 35th Anniversary celebration! 🎉🍻 Receive a voucher for a FREE Dominga or Transatlantique Kriek sampler when you order a collab flavor from Edison's Cart. 🥃
