Lemon Blueberry Sourdough French Toast Bake with Whipped Ricotta
I'm down to the last pieces of my Lemon Blueberry Sourdough from Petra Bakery, and there was only one logical thing to do. ✨️Brunch✨️
For the French Toast Bake
You'll need:
- The saved ends of your loaf plus 3-4 additional slices of Lemon Blueberry Sourdough
- 2 eggs
- 1 1/2 tbsp brown sugar
- 1/4 tsp nutmeg
- 3/4 cup milk of choice
- Cinnamon to your heart's desire (unless you're me... thanks, allergies.)
- 1/4 cup blueberries (fresh or frozen)
Cube the bread into roughly 1/2-inch pieces. Don't stress about making them perfect, rustic is the vibe.
Grease an 8x8 baking dish. In the same dish, whisk together the eggs, brown sugar, nutmeg, milk, and cinnamon if you're using it.
Add the cubed bread right into the pan. Go wash your hands, then gently toss everything until every piece is coated. Don't squish the bread! It'll look like there's a little extra liquid hanging out in the bottom, and that's completely fine. The bread will soak it up.
Scatter the blueberries over the top. If you're using frozen blueberries, let Chef Mike (aka the microwave) work his magic for about 30 seconds first.
Cover the pan with foil and bake at 350°F for 30 minutes, removing the foil halfway through. It's done when the liquid at the bottom is no longer liquid. Don't worry... it won't taste like eggs. You're doing great.
Next step:
Whipped Lemon Zested Blueberry Ricotta
You'll need:
- 3/4 cup ricotta (whole milk, skim, fat-free... it doesn't matter)
- Zest of 1 lemon
- 1/4 cup blueberries (fresh or thawed)
- 1 tsp honey or sugar (add more if you like it sweeter)
Combine everything in a bowl and whisk away. It isn't going to turn into fluffy egg whites, so don't set yourself up for disappointment. Think thick, creamy yogurt instead.
Don't Like Ricotta?
If you don't like ricotta, and I can't convince you to give it a shot, make this simple glaze instead.
Vanilla Glaze
- 1 cup powdered sugar
- 2 tsp water or milk
- 1 tsp vanilla bean paste (or vanilla extract)
Whisk everything together until smooth. If it's too runny, add more powdered sugar. If it's too thick, add a little more liquid.

Still not feeling it? Grab your favorite syrup and call it a day.
To Serve
Let the French Toast Bake cool for about 5 minutes.
Top with the whipped ricotta or vanilla glaze, dust with powdered sugar, and serve with fresh strawberries... preferably the ones your toddler decided they didn't want.
