Sausage Rolls
1/3 rough chopped onion
Lump of butter (3TBS)
Into a microwave safe bowl for 3-5 mins depending on microwave
Fold out your favorite (thawed) puff pastry sheets. I rolled mine out a little with a rolling pin. Slice down the middle.
A egg beaten … set aside for later
Preheat oven to 375° with the baking sheet inside🤷🏻‍♀️
1 lb sausage
Your favorite seasonings
Handful of bread crumbs
Add to onions and butter. Use your hands to mix up. Form it into two long skinny ships (logs) and place in the middle of puff pastry. (Now I had to use one half as a top for my rolls as my “ship” was pretty thick😉) brush the edges of your pastry dough on either side of the “ship. Place the topper sheet on top and gently form over the meat tucking the edge under the “ship” as best you can. Fold up the bottom sheet over the top and seal the edges with egg. Cut to desired lengths I did three each roll but you could easily do four. Place each roll onto the heated baking sheet flipping so the seams are underneath. Brush the tops and sides with remaining egg bake for 20-30 mins

Northern Ireland Fruit Slims/Griddle Scones

25 g melted butter. (1/8 cup)
Small handful sultanas (yellow raisins).
200g plain flour (1 2/3 cup)
1/2 teaspoon bicarb of soda
1/2 teaspoon salt
3 teaspoons sugar.
1 egg
Enough buttermilk , added slowly to make a dough.
Shape into thin rectangle, cut in desired size and cook in preheated griddle cook on all sides for 2-3 mins done when hollow to tap

Orange Soda Bread
Zest and juice of one orange about 1/4 cup
Yellow raisins (or craisins) good size hand full
Mix, cover and microwave 1 minute set aside
In a large bowl
450 g flour (3 2/3 cup)
1 tsp soda
1 tsp salt
50 g sugar (1/4 cup)
Mix
In a smaller bowl
50 g butter melted (1/4 cup)
300 ml buttermilk (approx 1 cup)
1 egg
Beat together
Add to dry ing leaving a little in the bowl
Add the raisin mixture
Stir it up
Line and lightly flour a baking pan, pour dough on the floured surface. Shape into circle or oval, make a cross on the top (to let the fairies out) spread the leftover liquid on the top.
Bake at 180-200° C (350-390°F) for 35-45 mins until lovely risen and golden and the bottom taps hollow.

Cheese and Onion Irish Soda Bread

Dry Ingredients
3 3/4 cups All-Purpose Flour
•1 teaspoon Salt
•1 teaspoon Baking Soda
• 1 heaping teaspoon Sugar
• 1 small Onion, finely chopped
• 2 cups Sharp Cheddar Cheese, grated
Wet Ingredients
• 1 2/3 cups Milk
• 1 tablespoon Lemon juice
Instructions
1. Prep the Buttermilk: Combine the milk and lemon juice in a small bowl. Stir and let sit for a few minutes to thicken.
2. Mix Dry Goods: In a large bowl, whisk together the flour, salt, baking soda, and sugar. Stir in the chopped onion and grated cheese until evenly distributed.
3. Form the Dough: Gradually add about 3/4 of the milk mixture to the dry ingredients. Stir gently until the dough just comes together. It should not be too wet; avoid overworking the dough. Add the remaining liquid only if the mixture is too dry to hold its shape.
4. Preheat: Heat your oven and a baking tray to 375°F
5. Shape: Turn the dough out onto a lightly floured piece of parchment paper or foil. Use floured hands to shape it into a rounded loaf.
6. The Cross: Carefully transfer the dough (and paper) onto the preheated baking tray. Cut a deep cross into the top of the loaf. Dab a little extra buttermilk onto the top with your fingertips.
7. Bake: Bake for 35–40 minutes until the loaf is golden brown and sounds hollow when tapped on the bottom.

Maple Pear Tart

½ (17.3 ounce) package frozen puff pastry, thawed

¼ cup butter

⅓ cup brown sugar

¼ teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

¼ cup maple syrup

4 firm pears, peeled, cored, and halved, or more as needed

Preheat the oven to 375 degrees F (190 degrees C).

Roll out puff pastry on a lightly floured surface to ¼-inch thickness; place in refrigerator.

Melt butter in a 9-inch cast-iron skillet over medium heat; add brown sugar, cinnamon, and nutmeg. Cook and stir until sugar dissolves, about 5 minutes. Stir in maple syrup; cook and stir until begins to bubble. Remove skillet from heat.

Cut pear halves in half; arrange pear quarters around skillet cut-sides up.

Place skillet over medium-low heat; cook pears, basting with syrup mixture, until pears begin to soften, about 5 minutes. Remove skillet from heat.

Place puff pastry over pears, tucking edges around pears in skillet.

Bake in the preheated oven until pastry is puffed and golden, about 20 minutes. Cool for 5 minutes. Place a serving plate over skillet; carefully invert to release tart onto plate (skillet will still be hot). Serve warm, drizzle with cream

Banana Bread Chocolate Chip Cookies
1/2 cup softened butter
1/2 cup brown sugar
2 TBS sugar
1 egg
1 banana
1 tsp vanilla
1 1/2 cups flour
1/2 tsp each: salt, baking powder and baking soda
1 cup chocolate chips (really should be measured with your heart😉)
Cream butter and sugar, add egg, banana and vanilla. Beat about 2 mins. Add flour, baking powder, baking soda and salt; mix well. Fold in chocolate chips.
Bake at 350° for 10-13 mins

Pumpkin Spice Cake

Pumpkin Spice Cake Ingredients:

1 cup (2 sticks) butter, softened
2 1/2 cups all-purpose flour plus additional for dusting pan
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground ginger
1/4 tsp. ground cloves (optional)
1/2 tsp. salt
1 (15 oz.) can pumpkin puree
3/4 cup well-shaken buttermilk
1 tsp. vanilla extract
1 1/4 cups granulated sugar
3 large eggs
Cream Cheese Glaze Ingredients:

4 ounces cream cheese, softened
1/4 tsp. vanilla extract
1 cup powdered sugar (plus extra if needed)
1-2 Tbsp. milk

Instructions

To Make The Pumpkin Spice Cake:

Preheat oven to 350°F. Grease a bundt pan with cooking spray or butter, then sprinkle the entire surface with flour (or granulated sugar) and shake off the excess.
In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves (optional), and salt until combined. Then in a separate bowl, stir together pumpkin, buttermilk and vanilla until combined.
Using an electric mixer, beat butter and granulated sugar on medium-high speed until pale and fluffy, about 3 minutes. Add eggs and beat 1 minute, using a rubber spatula to scrape the bottom of the bowl so that everything is combined. Reduce speed to low and add flour and pumpkin mixtures alternately in batches, beginning and ending with flour mixture and mixing until batter is just smooth. Do not overbeat.

smooth the top of the batter with a spatula so that it is smooth. Bake until a wooden pick or skewer inserted in center of cake comes out clean, 45 to 50 minutes. Cool cake in pan on a cooking rack for at least 20 minutes. Then invert cake onto a cooling rack or a cake platter. Top with cream cheese glaze when cooled, or dust with powdered sugar.
To Make The Cream Cheese Glaze:

Using an electric mixer, beat the cream cheese, vanilla, and powdered sugar together on medium low speed until combined. Add milk one tablespoon at a time, beating to combine, until the glaze reaches your desired consistency. If the glaze gets too thin, add in more powdered sugar.

*I made mine cake in a 9x13 for 45 mins. Let it cool for 10 mins and then poked holes in the cake and spread on the glaze.*

Pumpkins Muffins

*I have found that it makes one more muffin than the suggested amount🤷🏻‍♀️. I found if you’r making large muffins then the baking time is about 1-hour rather than the suggested baking time. I found that this is aLOT of topping, but it refrigerates well for the next time😉*

Ingredients
¾ cup (170 g) unsalted butter melted and cooled at least 10 minutes
½ cup (100 g) granulated sugar
¼ cup (50 g) light brown sugar
2 large eggs lightly beaten (room temperature preferred)
1 cup (240 g) canned pumpkin puree¹
2 Tablespoons milk
1 ½ teaspoon vanilla extract
1 ¼ cups (156 g) all-purpose flour
¾ teaspoons baking powder
¾ teaspoons baking soda
½ teaspoon salt
2 teaspoons pumpkin spice
(3 Tbsp. ground cinnamon 2 tsp. ground ginger 2 tsp. nutmeg 1 1/2 tsp. ground allspice 1 1/2 tsp. ground cloves *put in a container or zip bag.)
½ teaspoon ground cinnamon
Streusel Topping²
1 ¼ cup (156 g) all-purpose flour
½ cup (100 g) light brown sugar tightly packed
⅓ cup (66 g) sugar
¾ teaspoon ground cinnamon
6 Tablespoons (85 g) salted butter³ melted and cooled until no longer warm to the touch
Glaze (optional)
½ cup (65 g) powdered sugar
2-3 teaspoons milk

Instructions
Preheat oven to 375F (190C) and line a 12-count muffin tin with paper liners (or lightly grease and flour). Set aside.
Combine melted, cooled butter, granulated sugar and brown sugar in a large bowl and stir well.
Stir in eggs. Add pumpkin puree, milk, and vanilla extract and stir well.
In a separate bowl, whisk together flour, baking powder, baking soda, salt, pumpkin spice, and cinnamon until well-combined.
Add your dry ingredients into your wet and gently stir until just combined, taking care to not overmix the batter.
Evenly divide muffin batter into prepared muffin tins (filling each ¾ full). Set aside while you prepare your streusel.
Streusel
Prepare your streusel by whisking together flour, sugars and cinnamon.
Pour the melted butter into the mixture and, using a fork, stir until crumbles form. Don't overwork the streusel or you'll end up with a paste, you want it to be nice and clumpy!
Using your hands, evenly divide streusel over muffin batter, piling the streusel over the batter and gently pressing the topping into the batter.
Bake 17-19 mins (until pick comes iut clean)
