Did you know our Sinigang gets its signature tang from two traditional Filipino souring agents?

🥭 Sampalok (Tamarind) brings a bright, bold sourness that gives Sinigang its classic tang.

🍈 Bayabas (Guava) adds a gentler tartness with subtle sweetness and a fragrant aroma.

While both are used as souring agents, each contributes its own distinct flavor profile. Together, they create the balanced, comforting broth that has made Sinigang one of the Philippines' most beloved dishes.

At Adobo Boy, we use this combination as the base for both our Sinigang Soup and our Sinigang Wings, bringing those authentic Filipino flavors to every bite.

A quick heads-up: We'll be closed this Saturday, July 25, for a private event celebrating Guam Liberation Day. We'll be serving a beautiful Red Snapper Sinigang for the celebration. We are looking forward to making it!

As I sit here wrapping flatware at the end of the night, I can't help but smile.

Thank you to everyone who joined us for dinner tonight. Seeing so many of you fill our little restaurant during our 2½-hour dinner service truly means the world to our family.

Tonight, many of you complimented our dishes, flatware, and even our linen-feel napkins. It made me realize that it's often the little things people remember.

Every fork I wrap, every plate we polish, every table we reset—it's all done with one hope: that when you walk through our doors, you feel cared for.

Thank you for choosing Adobo Boy for your dinner tonight. We don't take that for granted, and we're already looking forward to welcoming you back tomorrow.

We're back! ❤️

Starting tomorrow, Wednesday, July 22, we're back open for lunch and dinner and we can't wait to see everyone again!

Also... if you notice I'm wearing a zip-up in the restaurant, it's because... WE HAVE AIR CONDITIONING AGAIN! 🎉❄️ No more 105° dining room and even hotter kitchen. It feels amazing!

Thank you for hanging in there with us while we waited. We also want to give a huge shout-out to our landlord, Dan Uc***lo and Davide Uc***lo for their incredible support and for helping make a new AC happen sooner rather than later. We truly appreciate you both.

We miss our kitchen... but even more, we miss all of you.

We're hoping and praying our new AC will finally be installed this week. We stopped by today to clean and prep, but it became so warm in both the kitchen and dining room that we had to call it a day. Just a little longer... we're almost there.

One thing we've been doing while we wait is dreaming up new dishes for when our doors reopen. Today's experiment is Pancit Molo—a comforting dumpling soup that we fell in love with after sharing a bowl in a neighbor's home in the Philippines.

It's one of those dishes that seems simple, but every little dumpling is made with care. Sometimes the simplest foods carry the biggest memories.

We can't wait to share this one with you in the future.. and yes, of course, it comes with side of rice. 🍚❤️

Thank you for your patience, your prayers, and for cheering on our little family through this unexpected pause. We miss you all and can't wait to welcome you back to Adobo Boy.

This memory popped up today, and it made us stop and smile.

Eight years ago, Ace had the honor of singing the National Anthem before a Whitecaps game. Looking back at this video, it's hard to believe how much life has changed. Years before this moment, he probably wouldn't have had the courage to stand in front of thousands of people and sing.

Then everything changed when Ace met Jackie.

One of the greatest blessings in our family's story is how we balance each other. Jackie has always been the brave one, encouraging Ace to say "yes" to opportunities he might have been too cautious to take. Because Jackie believed in him, Ace found the courage to say "yes" to things he never thought he could do. Looking back, so many of those "yes" moments opened doors we never could have imagined.

If you listen closely, you'll even hear little Redd talking about the fireworks in the background. He was only four years old. We had no idea what the years ahead would hold, and somehow hearing his little voice is our favorite part of this video.

Like every family, we've had seasons of joy and seasons of challenge. We never want to share only the highlights.

Ace's health has changed some of the things he loves, including playing the guitar and ukulele. And recently, our restaurant's air conditioner decided it had reached the end of its journey during one of the hottest weeks of the year.

But something beautiful happened.

The Wednesday before we temporarily closed, many of you still came. You waited patiently in line, smiled through the heat, and reminded us why we started Adobo Boy in the first place.

We'll never forget that.

Looking back, we realize it wasn't just the big moments that shaped us. It was the people who believed in us, the challenges that stretched us, and the courage to keep saying "yes" when new opportunities came along.

Maybe that's why we love sharing Filipino food so much.

It's never been just about what's on the plate. It's about opening our hearts, bringing people together, and creating a place where everyone feels like family.

We don't know exactly what the next chapter holds. But if these past eight years have taught us anything, it's that every season has a purpose, every setback teaches us something, and every blessing is worth celebrating.

Thank you for believing in our little family. Thank you for encouraging us through the hard days and celebrating the joyful ones with us.

Here's to the next chapter. We can't wait to share it with all of you. ❤️
