You may be familiar with different names such as baozi, salopao, bahn bao, mandu, or others. Gallafe started as a food blog around 2015. Eventually from suggestion from folks, the idea of starting a Filipino food po

p up arose. That same year, Kultura Festival hosted by Filipino Kitchen in Chicago had its first event. The festival and food movement influenced this journey. Finally in 2020, the push to open a food establishment was underway. However the onset of Covid 19 complicated planning. Despite the delay, it gave Gallafe time to reimagine itself and adapt during these times. Zyka LLC was created to umbrella Gallafe, and to allow for future growth and endeavors. Gallafe currently used Beeside Kitchen (shared kitchen) along with several other food companies. Gallafe offers steamed buns at local markets, take out meal pop-ups, and Cater/party tray specialty orders. We've recently acquired a capacity building grant to start cultural programing for Gallafe's offshoot, Kultura Education Center! Follow to keep up to date for those events. Here are some pics from last weekend’s bake day.

Coconut, ube, and pandan make both beautiful and delicious ingredients that pair well with each other. Calamansi, red bean, sweet jackfruit, among other flavors make colorful and fun creations.

Each week you can try a Filipino staple, or a creative mashup. There’s more than just vanilla and chocolate (which we love ;) )

Meal Prep
Thank you to the folks who have tried our new meal prep features! As we try different meal boxes, we'll be sending a survey to see what you liked best. Meal boxes are microwave and freezer safe. Reheat instructions are on the label. We'll also be working on videos that we'll eventually include QR codes for easy access.

Bake Day
New Saturday bake days include weekly donut flavors, tarts, cookies, breads, and hands, and lunch boxes. Recently we have added packaged frozen steamed buns. While you can pre-order them along with your weekly features, they are available to walk-ins since they're already pre-made. So if you are in the area and would like to pick up some frozen siopao, stop by from 11a-2p on Saturdays!

March Schedule
Before the summer busy season starts, Baon will be taking a brief break between 3/23 - 3/31. We'll still be open on 3/14, 3/17, and 3/21.

Jumping on this trend: This is the cook. She isn’t as much of a cake person now, but still very much likes most food 🥘 she’s the webmaster, social media manager, and owner.

The picture was from my 2nd birthday. I was still living in the Philippines. It’s crazy to think we were all that small.
That being said, I hope we’ve all become the adults that our younger selves could be proud of, depend on, and feel safe with. Maybe revisiting our childhood pics helps remind us to be kind to ourselves, but also remind us to create a world where kids can grow up to become healthy, compassionate adults.

Ube has become more familiar as a flavor in the US. However, it is still misidentified or mislabeled frequently. Here are a few things to know:

Ube is a yam not a sweet potato. There are purple potatoes, purple sweet potatoes, and but ube is a purple yam. Yams have a rough outer skin, while potatoes have smooth edible skin. Ube has a vanilla-ish nutty flavor. Many ube products use ube flavoring without containing the yam. But you can use them together as well. Without food coloring, it’s a lighter purple
Fresh ube is also hard to come by. Dehydrated and frozen ube are widely used due to limited supply, which affects the cost. While your average potato costs $1 or less p/lb, ube on average costs $4-5 p/lb frozen or more if it’s fresh. That’s why you’ll find some products to be more expensive.

New Things On The Horizon
We’re dedicating this month to look at what works and what doesn’t for Gallafe; what can improve, and what can be added. It will take a couple of months to hash out the new plan, but we’ll be ready to fully relaunch by the new year. Creating a team will also take time, as this has mainly been a solo effort. The creation of Gallafe has always been community minded, and this new business plan will build even more on those same principles. This business not only serves customers, it’s also a vision, a creative endeavor, and outlet for cultural expression, and participant in local ecosystems. As we work on the new business plan, here are the current updates:

Farmers Market
We had to unfortunately cut our season short last month. However, Gallafe will be back again during the next regular season. We’ll be back with our regular offerings as well a new look. :)

Pop-Ups / Events
While Gallafe won’t be at the market, we will continue to take part in events and pop ups. Make sure to check online or follow Gallafe to see dates and times.

Catering - Special Orders
We will also continue to take catering and special orders. Contact us for a quote and to see a menu.
