Whiskey baba or commonly known as a baba au rhum. Nothing more than a small yeast cake saturated in syrup made with hard liquor (in this case i chose a vanilla whiskey), usually rum, infused with aromatics for added flavor and sometimes filled with fresh whipped cream or pastry cream. I chose vanilla bean Chantilly. It is most typically made in individual servings but sometimes can be made in larger forms similar to those used for Bundt cakes.

Choux pastry, or pâte à choux, is a delicate pastry dough used in many pastries. Basic ingredients usually only include butter, water, flour and eggs. Instead of a raising agent, choux pastry employs its high moisture content to create steam, as the water in the dough evaporates, the steam causes puffing of the pastry.

Choux pastry is usually baked. In some instances choux is fried. Beignets, churros, & zeppoles are the common global fried versions while the carnival classic in America is funnel cake. In Australia, one variation is Marillenknödel, a sweet apricot dumpling.

rustic means “having a simplicity and charm that is considered typical of the countryside,” which in terms of icing cakes used to mean “looks homemade.” But as with most cake decorating, we've come a long way from just that “not so perfect” cake look grandma used to make.

From backyard celebrations to barn receptions, rustic cakes have become an industry-wide mainstay, with people going crazy for organic details and touches of subtle elegance.

Paris Brest is said to have gained its named for the route of a bicycle race that runs from the French capital, Paris, to Brest, a naval town in Brittany. The commonly held origin story says that in 1891, newspaper editor Pierre Giffard hoped to encourage bicycle use in Brest by launching a race to Paris.

Paris Brest, a wheel-shaped pastry made from pâte à choux, typically topped with almond slices, baked, split, and filled with pastry cream flavored with praline paste and fortified with butter. The cream is piped into the pastry with a fluted pastry tip to mimic, roughly, the spokes of a bicycle wheel.
