2½ cups low-fat cottage cheese, blended smooth with 8 tbsp red enchilada sauce
15 oz cooked shredded chicken
2½ tsp taco seasoning
2 cups diced bell peppers
1 cup black beans
2½ oz shredded cheddar or Mexican blend
Toppings: cilantro, green onion, avocado, 2/3 cup Greek yogurt or sour cream

Instructions
Mix the enchilada cottage cheese sauce with chicken and taco seasoning. Fold in bell peppers and black beans. Divide into 5 bowls, top with cheese, heat until bubbly, then add toppings.

1 lb ground beef
1 lb Italian sausage
1 small onion, diced
4 cloves garlic, minced
1 jar marinara sauce

2 tbsp tomato paste
1 tsp sugar
1 tsp dried basil
2 tsp Italian seasoning
Salt and pepper to taste
15 oz ricotta cheese
1 large egg
1 1/2 cups shredded mozzarella
1 cup grated Parmesan
12 lasagna noodles
3 cups shredded mozzarella

Instructions:

1. Brown beef and sausage with onion and garlic; drain excess fat.
2. Stir in marinara, crushed tomatoes, tomato paste, sugar, and seasonings. Simmer 15 minutes.
