Some ingredients are worth the effort. This season, we asked Glenn Scott Farm to grow dragon tongue beans, a beautiful heirloom variety with a tender texture and rich, buttery flavor, just for this special: Charred Dragon Tongue Beans with smoked almonds, scape chili crisp, and pickled scapes.

One of the best parts of working with our own farm is the collaboration. We can dream up ideas together, grow unique varieties you won't often find elsewhere, and create dishes that are truly centered around the season.

Our Steelhead Tartare begins with carefully sourced steelhead from Hudson Valley Fisheries–the same ingredient featured in one of our entrées–allowing us to make full use of every cut. Finished with pickled ramps, crispy shallots, and scallion aioli, it delivers bright flavors and rich texture in every bite.
