Meathead Tater Salad
2lbs of new potatoes
1/4 tsp salt
3 Tbsp of Meathead #82 or Cranberry Mustard from Meathead Kitchen
3/4 cup of mayo or miracle whip
1/2 cup sour cream
1/2 tsp smoked black pepper
1/2 tsp pink Himalayan salt
2 stalks of celery with leaves, chopped
1 small red pepper, chopped
1 small yellow pepper, chopped
1 medium red onion, chopped
3 hard boiled eggs, sliced
1 Tbsp Parsley
Place washed potatoes in a large pot. Cover with water and add the 1/4 tsp of salt. Bring to boil. Reduce heat and cover. Simmer for 20 minutes. Set aside to cool.
While cooling, in a large bowl combine the mayo or Miracle Whip, sour cream, Meathead Kitchen mustard, and salt and pepper.
Chop veggies and add to the dressing mixture.
Once cool enough to handle, dice the potatoes, and slice the eggs. Gently add both to the bowl and turn with a wooden spoon until we’ll combined.
Sprinkle with parsley.
Serve with hot dogs slathered with Meathead Kitchen mustards, pork butt rubbed with Meathead Kitchen mustard and then smoked, or hamburgers mixed with Meathead Kitchen mustard. #603
