This cake isn't perfectly smooth.

And that's intentional.

I've decided to proudly offer rustic cakes for those who love desserts that look handmade—because they are.

For the Fourth of July, I created this coconut oil-free cake with delicate organic lemon & vanilla cashew mousse, a vibrant raspberry layer made with fresh raspberries from our own garden and freeze-dried raspberries, all lightly set with psyllium husk and agar agar.

The crust is made with nuts, pumpkin seeds, pistachios, and freeze-dried raspberries, giving every bite a little texture and a lot of flavor.

Everything is organic, gluten-free, dairy-free, refined sugar-free, and made in small batches.

The Baby's Breath is just for decoration (not edible), but every berry on this cake is real.

I've realized these photos represent me better than perfectly styled ones.

They're honest.
They're handmade.
And so are my cakes. ❤️

I woke up extra early today to make the freshest, most delicious desserts just for you. Every layer was made this morning with lots of love, fresh ingredients, and a little excitement for today's market.
This is my last summer Saturday at the Hood River Farmers Market before I head to Europe, so I'd truly love to see some familiar faces. ❤️
I'll have berry favorites, chocolate mini tortes topped with freshly picked local cherries, and my organic espresso & chocolate dessert with a silky salted date mousse that tastes just like caramel.

Tomorrow's menu is all about summer, fresh flavors, and a little bit of indulgence. ❤️

This afternoon my kiddos and I went cherry picking, so tomorrow's Hazelnut Chocolate • Local Cherries mini tortes will be made with freshly picked local cherries. There's something so special about using fruit picked just hours before it becomes dessert.

What a busy and beautiful day at the market! ❤️

Between a busy market and several custom orders, I had just enough time to sneak away for a few minutes and take some pictures of these little beauties in our garden.

I am so happy and grateful — all of the mini tortes sold out, and by the end of the market I was almost completely sold out! 🥹✨

The new Espresso Chocolate flavor was a huge hit and disappeared so quickly! ☕🍫🤎 Thank you to everyone who stopped by, placed an order, and supported my little business. A busy market and extra orders truly made my day. ❤️

Seeing familiar faces, meeting new customers, and watching these desserts bring joy to others makes all the work worthwhile.

Tomorrow at the Hood River Farmers Market, I’ll have a limited number of my new Father’s Day Mini Tortes available!

✨ Salted date caramel-like mousse

🍓 Topped with fresh strawberries and crunchy almond pieces

As always, they are made with only high-quality organic ingredients and are:

I can hardly wait for Saturday and another wonderful day at the market!

If the weather forecast is right, it looks like we'll have the perfect weather for cakes and desserts this weekend. ☀️✨

I'll be bringing a delicious selection of my raw vegan, gluten-free, dairy-free treats, and even though the cooler temperatures may be ideal for cakes, the ice creams are making a comeback too! 🍓🥭🍦

Confession: Yesterday's cake deliveries were made by a pirate. 🏴‍☠️
After spending the day leading a pirate sailing adventure for young Hungarian Scouts, there wasn't enough time for a wardrobe change before delivering dessert orders.
Thankfully, the cakes survived the voyage, the customers got their treats, and no mutiny occurred. ⚓️
Just another day of balancing motherhood, community events, and running Gorge's Tortes.
Life is never boring around here. ❤️

This weekend I'm preparing a larger order for a graduation celebration, which means I'll be making extra mini desserts in three delicious flavors:

🍓 Strawberry
❤️ Raspberry

Since I won't be at the market until June 20th and June 27th, I thought I'd offer these flavors for pre-order to anyone who might have been hoping to find me there sooner.

It's also a lovely opportunity for those who would like a smaller quantity, as I'm happy to accept orders of fewer than 4 desserts this time.

Please note that orders are available only in these three flavors.
