This cake isn't perfectly smooth.
And that's intentional.
I've decided to proudly offer rustic cakes for those who love desserts that look handmade—because they are.
For the Fourth of July, I created this coconut oil-free cake with delicate organic lemon & vanilla cashew mousse, a vibrant raspberry layer made with fresh raspberries from our own garden and freeze-dried raspberries, all lightly set with psyllium husk and agar agar.
The crust is made with nuts, pumpkin seeds, pistachios, and freeze-dried raspberries, giving every bite a little texture and a lot of flavor.
Everything is organic, gluten-free, dairy-free, refined sugar-free, and made in small batches.
The Baby's Breath is just for decoration (not edible), but every berry on this cake is real.
I've realized these photos represent me better than perfectly styled ones.
They're honest.
They're handmade.
And so are my cakes. ❤️
