Sawara, AKA Spanish Mackerel, is a special type of mackerel, almost nothing like regular mackerel. The fish reports and photos from earlier this week showed really excellent quality, and while it’s expensive, I ordered some, because you’ll love it. Bluefin, Hokkaido Scallops, Sawara, and our hot foods to compliment your sushi are what I recommend for this weekend, on top of all our white fish options.

Caught Wednesday Morning, Ikejime-dispatched, filled and gutted and force bled immediately. Packed in an ice slurry, taken to the airport in the evening, shipped to Houston, picked up this morning, broken down immediately for service. All in 24 hours.

We sell the same quality bluefin as everyone else in the city, but for a fraction of the price. This one is a 247lb Pacific Farmed Bluefin from Baja, and it’s in EXCELLENT condition.

We go through this entire fish much quicker than every restaurant in Texas.

Hokkaido Hotate (Scallops) are some of the absolute best in the world and command big prices, but I still choose to sell them for as low as possible, opting for volume over higher margins. Pricing can be deceptive at some sushi restaurants, as they’ll turn one scallop into multiple pieces of sushi. We use a whole 3S Hokkaido scallop for every piece of sushi we serve. That important distinction, coupled with our low pricing, makes for the best value you’ll find on Hokkaido scallops compared to any other establishment I’ve seen so far. If you’re in Houston and not allergic to shellfish, I hope you take a chance to experience one of sushi’s most amazing bites of food.

We’re going to keep closed for dinner service so we can work on proper inventory of dry storage, training a new apprentice named Derick (who’s been awesome and shows lots of potential), and getting some much needed organization done that have been on the to-do list for way too long.
