🇲🇽 Enchiladas Mexicanas, just like my husband loves them! ❤️

Made with queso fresco, potatoes, carrots, onions, and a delicious red sauce. These have always been his favorite!

Now I want to know…

Steak fajitas or chile relleno? 🌶️🥩

We stopped by Chuy’s, and I ordered their chile relleno platter. They use a Hatch pepper instead of a poblano, which gave it a different flavor.

It was really good… but I have to admit, I still love steak fajitas more. 🥩 I guess I’m just a beef lover!

Here at Rodeo Mexican Bar & Grill, we make ours with crispy tortilla chips, fresh pico de gallo, fluffy scrambled eggs, and plenty of melted cheese. 🤤🧀
