Barbecue and Fireworks, Two of my favorite things. My summers are spent doing both. I am a state licensed pyrotechnian and when it came time to come up with a name for my dry rub, it was only natural I tie it in with fireworks.

Nothing quite like the sound of skirt steak sizzling on a hot discada!

Seasoned with PyroDust BBQ Dry Rub Steak Seasoning, seared, sliced, and turned into some seriously good steak tacos.

Sometimes simple outdoor cooking makes the best meals.

Anybody else use a discada for cooking?

BBQ in the Wild: Sighting #1

Working one night when we spotted this beauty sitting under an awning.

Forget the equipment we were supposed to be looking at. We were checking out the smoker.

Anybody else find themselves checking out random grills and smokers wherever they go? Sometimes you come across some pretty impressive setups.

A great sandwich starts long before the bread touches the plate.

A nice piece of beef, a good dusting of PyroDust, and some time over the fire. Beautiful bark on the outside, tender and juicy on the inside. Slice it up, pile it onto a bun with smoked cheddar, pickles, onions, and a little BBQ sauce, and you've got one amazing sandwich.

Sometimes the simple things are the most satisfying.

What's your must-have topping on a good BBQ sandwich?

Growing up in North Central Illinois, Friday nights at the local dirt track meant racing and pork chop sandwiches from the concession stand. Those big, thin chops hanging off the bun were always worth standing in line for, and they usually sold out fast!

I decided to recreate that old favorite with a pork chop Dusted with PyroDust Medium, cooked over hot charcoal, and topped with white onion, bread-and-butter pickles, spicy b**r mustard, and BBQ sauce.

Sometimes the simplest food brings back the best memories.

Anybody else remember a concession stand favorite from growing up?

There is something satisfying about pulling a bone clean out of a perfectly smoked pork butt after hours of slow smoking. Beautiful bark, tender and juicy meat. Sometimes the results speak for themselves.

Is there anything better than a good low and slow BBQ cook? 🔥

Can you really smoke butter with a cocktail smoker, or is it just a gimmick?

I decided to experiment with homemade rosemary garlic butter. The idea is simple: add a little wood smoke to an already delicious compound butter and use it to finish a juicy steak.

But does this little cocktail smoker actually deliver enough smoke to make a difference?

**What do you think? Did this work, or was it more show than smoke?**

I'll share my results in the comments.

Follow the smoke!

We stumbled across some incredible Chinese BBQ while exploring the night market in Monterey Park, California.

Sizzling skewers, glowing charcoal, and the smell of delicious food filling the streets. Sometimes the best food discoveries happen when you least expect them!

What's your favorite night market food?

Quick an simple lunch, grilled jalapeno cheddar sausage wrapped in a warm tortilla.

The top of the grill made the perfect tortilla warmer while the sausage cooked

I have had this little flat pack grill for a while, Kinda forgot all about it until this last trip.
