Someone was sweet enough to reach out and share that folks miss the Tofu egg salad at SRFS. My goal was to make a cookbook, but working full time, raising a family, trying to stay healthy & exercise is a lot…so for now, I’ll share here. We miss yall loads and are sending all our love.

🎉RECIPE BELOW 🎉Gosh, I miss making and sharing food with you all. It was medicine for my soul and I miss it daily. I made cupcakes for my kid’s school and I was reminded how easy this recipe is so I wanted to share!

Recipe
3.5 C Gluten free flour (I 🩷 1:1 Flour blend)
2 C sugar
2 teaspoon baking soda
1 teaspoon salt
2 c milk of choice ( we use coconut or oat)
2/3 melted coconut oil
Flavoring of choice.

Preheat oven to 350 degrees.
Mix the first 4 ingredients together. Slowly add milk and oil and blend until fully mixed. Grease muffin tin and scoop batter into molds. Bake for 30 minutes. Remove and allow to cool before icing.

Icing
1/2 c room temperature butter (we use earth balance)
2 c powdered sugar
1 tablespoon milk of choice

Mix all together. Add any flavoring or color.

Enjoy!!
