Biscuits are back at the bakery! So I had to go pick up more strawberries from the Kalamazoo WEEKDAY Farmers Market!

Tuesdays and Thursdays from 8am-1pm, you can find a few farmers and vendors. It's a much smaller turnout but it means a much more relaxed atmosphere with enough parking for even the most complaining facebook commenter.

As for the frozen biscuits? We sell them unbaked, frozen, in packs because Judy is adamant that the only good biscuit is a fresh biscuit! So instead of buying a biscuit that is going to be stale by the time you bring it home, you can bake them yourself and have the freshest biscuit possible!

As to where the frozen biscuits have been the last several months? Well, our packaging supplier changed their "recipe" resulting in a thinner plastic that didn't protect the biscuits enough in the freezer, which caused freezer burn and poor rising.

We went through a long process of waiting on samples of various packaging that were the right size, cost effective, and properly protect our biscuits. But we finally got there! These new and improved bags (from the wonderfully named VeeGee Enterprises) protect these biscuits in the freezer for weeks at a time, ensuring a wonderful rise when you bake them at home.

It's wild how many factors go into a bakery that have absolutely nothing to do with baking. But figuring it out is half the fun! Right? Right???

Our first fruit tarts of the month have lined up PERFECTLY with Michigan strawberry season!

A delicate short tart crust filled with vanilla pastry cream and topped with fresh Michigan strawberries and sealed with a strawberry glaze.

Michigan strawberries are nearly indescribable. They're nothing like the berries you get throughout the year that are shipped in from warmer climates. Those berries have been selected for their shelf life, ease of transportation, and aesthetics.

Local Michigan berries that you get from a farmer at the market are a whole different experience. They're sometimes lumpy, they'll spoil in your fridge after a few days, the season can be pitifully short, or it'll be plagued by rain and most will be too water logged.

But that perfect berry makes it all worth it. I often smell them before I see them at the market. A deeply sweet aroma that leads you to quarts of berries of varying shades of red, some nearly purple they're so dark. And the taste? That's where I lose my words. There's nothing more to say than they taste like a strawberry. Like what a strawberry truly tastes like. All the jams, flavorings, and shipped berries you get throughout the year pale in comparison. You get one, maybe two weeks, of truly perfect Michigan strawberries.

Somewhere in here is a metaphor for summer in Michigan. We put up with a lot of cold and darkness throughout the year. We try to fill the long gray winter with imitations of summer. Maybe a bit of travel to somewhere tropical, or a desperate purchase of a sunlight therapy lamp, or some meager attempts at indoor gardening.

But then the real thing comes along and you don't get it for as long as you wished or it isn't as perfect as you planned but it is here and it is real and it's better than anything you've experienced for the last 6 months. And you'll put up with another 6 months of longing to get a taste of it again.

Strawberry shortcake is the star of our Sunday brunch!

Hurry in, there is only a finite amount of strawberries (we'll get more next week!) and the Grove Street Triplets are about to start playing!

Michigan strawberries are just starting to make an appearance at the farmers market!

That means strawberry shortcake season is here at the bakery! Enjoy what just might be Judy's favorite brunch special Sunday morning while listening to the dulcet tones of the Grove Street Triplets.

A scratch made biscuit RIGHT out of the oven ("the only good biscuit is a fresh biscuit"), topped with macerated Michigan strawberries, and ever so slightly sweetened whipped cream. With berries this good, we don't need to jazz them up very much. Let the farmers' hard work speak for itself!

Brunch starts at 10 tomorrow, Grove Streets Triplets play from 11-1, and the bakery opens at 7:30 on Sunday! Every Sunday!

What a weekend we have for you!

Saturday morning we'll be at the Kalamazoo Farmers Market! Fingers crossed that we'll see the first few strawberries of the season, but I think we have another week until they hit their peak. If you haven't seen, the Kalamazoo Farmers Market has a new account, follow them Kzoo Farm Market to stay up to date on all the goings on!

Sunday is a rare 5th Sunday at the bakery. What does that mean? A fresh new artist, the Grove Street Triplets, will be performing an all acoustic set. As for the brunch special? Well, fingers crossed we're in strawberry season...

ALSO on Sunday is the grand opening of the new, permanent, stunning Portage Farmers Market! We are officially out of the sloping parking lot and under a standing structure! It is located a stones throw from the former location, right next to the Zhang Senior Center.

A lot of hard work has gone into this and the market manager, Brianna Wurtsmith has done a tremendous job organizing and communicating with all the vendors to set us up for the best farmers market Portage has seen yet!

Hope to see y'all at any number of places this weekend. Or maybe all three!

Happy Memorial Day Weekend! We are open Sunday with a terrific rhubarb French toast special.

Custard challah with a rhubarb compote, whipped cream, white chocolate ganache, and sous vide candied rhubarb! The rhubarb isn't just for show, it's my new favorite way of preparing it.

By cooking it low, slow, and level we're able to get wonderfully delicate yet stable pieces of rhubarb that have the perfect bite to them. Not stringy, not mushy, just a pleasant snap with a tartness balanced by an orange simple syrup.

Probably went well over the top today considering everyone is likely out of town, but if you're not then stop by the bakery and say hi! We'll be here until 2!



Oh and of course we got this rhubarb locally through ValleyHUB KVCC from Silly Goose Acres!

Tomorrow's Sunday brunch special is croque madame!

This cheesey fork-and-knife breakfast sandwich gets its name from the crunch of perfectly grilled bread. Top it off with a mornay sauce and a jammy egg and you're in breakfast bliss.

Enjoy brunch at the bakery tomorrow while listening to the KSO brass trio! We'll have extra seating and space as the concert is in the Columbia atrium. So if you've had trouble getting a spot at brunch in the past, have no fear! Tomorrow is your day!

Also, we've picked up some fantastic rhubarb at the Kalamazoo Farmers Market and this weekend sees the first batch of our rhubarb croissant! I'll post more about it later but we've made some changes to it that have worked out so well.

The Kalamazoo Symphony Brass Trio will be performing this Sunday at the bakery! Edward Hickman on trombone, Scott Thornburg on trumpet, and Paul Clifton on french horn.

This is part of the community concert series the KSO puts on throughout the year. We're grateful to live in a city that has such a rich music scene that we even have a symphony. We're even more grateful that the KSO is as community focused as they are, putting on concerts like this all over town free to the public!

Music will start at 11, brunch is at 10, and the bakery opens at 7:30. This Sunday!
