If you *think* jalapenos are less spicy than they used to be, you aren't crazy.
Big salsa companies had approved recipes for canning, but wanted something less spicy. So they asked some colleges to help breed some new, less spicy jalapenos. A college in Texas made it happen, and now a jalapeno from a grocery store seems half a step beyond a bell pepper.
When it's not in season, we do use grocery store jalapenos in our cornbread, but we wait until the season hits to throw them onto our focaccias, so they lean spicy, we hit it with a little bit of minced garlic.
We tend to run this as long as the peppers keep hitting because it's a crowd favorite, so check it out.
