📢 *** WALDO Temporary Closure Notice *** WALDO ONLY

Bayou Box will be temporarily closed for approximately one week as we focus on staff retraining, procedural improvements, and operational enhancements.

This short break will allow us to strengthen our team, refine our processes, and ensure we're delivering the best possible experience to our customers.

We appreciate your patience during this time. We're excited to reopen with improved service, greater consistency, and the same great food you know and love.

Don't worry, we'll be back better than ever! Approximated re-open date will be June 8th. We plan to also adjust back to being open every day.

** Waldo Location

Waldo is following Lone Jack, closing 2 days a week. It really helps us out in terms of keeping our recipes on point & our staff unburdened (especially our prep staff).

Effective next week, Waldo will be closed on TUESDAY and WEDNESDAY.

Thank you Waldo for the continued love! It's always great out here!

In the upcoming weeks, we'll be making adjustments to the Lone Jack menu. Some stuff will go, some will stay, some will be added. Our plan is to help cater the menu towards the location a little better, bringing in more flavors and more hearty meals.

We've had enough time to evaluate what is working and what isn't, and we're super excited to get back into the test kitchen and rock out some new meals! The specialty Po Boys have been an absolute hit, as have other items, while some have been misses. Our goal is to create more consistency as well, as we've been getting a lot of feedback to that effect. Likely some changes will feed into the Waldo location as well!

Also.. gator.. gator is coming.

Did you know our jambalaya has chicken, pork, and smoked sausage? We often get asked "where's the shrimp??" Followed up with "jambalaya always has shrimp!".. which isn't true! Jambalaya doesnt need shrimp to be called jambalaya. We've found out that more people than we figured have shellfish allergies, so we wanted to be able to let them enjoy it too!

Dont worry, you can always add grilled or fried shrimp to yours!
