Sprinkle kindness - the old fashioned way. Specializing in old fashioned style donuts, The Donut Theory is Knoxville’s only exclusively gluten-free donut shop. Our goal is to always pursue excellence in our process, creating more than “just donuts.” Our commitment to high quality ingredients, along with our dedication to making each donut by hand, ensures that your donuts are always made with love

and care. This enthusiasm for quality, combined with our love for new flavor varieties each week, guarantees a donut experience you can love and trust. We are just an average family that happens to really love food, and belives that all food should be excellent. Laura, the founder, also happens to have Celiac Disease and spent years searching for a good gluten free donut, only to find herself disappointed over and over. As a family, we wanted to create a product that was not known for being “okay for gluten-free,” but left people saying, “there’s no way that’s gluten free,” because it is so good. So that’s our mission. We want to bring the very best old fashioned (Laura’s favorite) to the Knoxville area, and leave you with your jaw dropped because it’s the best darn donut you’ve ever had—that just happens to be gluten free.

As we ramp up for tomorrow, we wanted to take a moment to reflect and thank everyone who has made Disco Chicken & Donuts what it is today.

One year ago, we had no idea what would happen as we transitioned from a food truck to a small stall inside Kerns Food Hall. We knew we had an incredible group of people cheering us on. We knew we had a quality product. And we knew we had built a fun brand.

At the heart of everything we do is food. As Chef always says, “We feed people with love, one at a time.”

When Laura founded The Donut Theory, she had one dream: to make an amazing donut that just happened to be gluten free. That mission became the foundation of everything we’ve built.

We promised we would always keep it gluten free—and we’ve kept that promise.

While we wish we could safely accommodate every allergy and provide a place where everyone could eat without worry, we also know our responsibility is to the gluten-free and celiac community. If we ever have to say we can’t safely accommodate an allergy, please know it is never personal. We will always choose safety first for the people who trust us with their health.

Over the past year, you’ve done something truly incredible.

Because of your support, your reviews, your encouragement, and your belief in what we’re doing, you’ve helped launch Disco Chicken & Donuts to the #2 highest-rated restaurant in the world on the Find Me Gluten Free app. That honor belongs just as much to you as it does to us.

More importantly, you’ve helped grow awareness for the gluten-free community and shown that gluten-free food can be exciting, craveable, and worth celebrating.

Tomorrow, more than 50 members of our team will come together to celebrate this milestone with you. It won’t be a perfect day—we may run out of some items along the way—but we’ll be cooking all day long, smiling all day long, and doing everything we can to make it a party.

There will be high fives
And there will be a whole lot of love
