EBT eligible! Beef Enchiladas - $8 single servings / $32 family size
Inevitably every couple of weeks, my family asks me to make “homemade Cazadorez.” They love it more than going to the restaurant. The issue we run into is I like corn tortillas, they like flour. Two of us like chicken enchiladas, the rest of the family likes beef.
So… I make all the enchiladas all the ways… but the amount of love that goes into making them means I can only put in the time every couple of months. Maybe it’s the anticipation and rarity that makes them so loved in our household. 🤷♀️
There are still Chicken Enchiladas in the freezer section along with today’s Beef Enchis, so y’all help us settle this debate! What’s better? Flour or corn? Chicken or beef? White sauce or red?
Beef Enchiladas: Roast cooked low and slow with my scratch-made au jus spice blend for a full 24 hours, hand shredded and tossed with sautéed onions and diced green chiles. Hand-fried tortillas coated in scratch-made sauce, rolled up with cheddar cheese and covered in saucy, cheesy perfection.

Chicken Enchiladas: Scratch-made salsa verde with sautéed onions, diced green Chiles, chicken stock, flour and cumin. Hand fried tortillas dipped in salsa verde and stuffed with a blend of slow-cooked chicken breast and thigh meat, with a Monterey Jack and cheddar cheese blend. After they’re rolled, a good dose of heavy cream, more salsa verde and cheese make these indulgent, y’all.
