The Story Behind General Tso’s Chicken

General Tso’s Chicken may sound like an ancient Chinese dish, but it actually has a more modern—and international—origin. The dish is named after General Tso Tsung-t’ang, a 19th-century military leader from China’s Hunan province. Interestingly, General Tso never actually tasted the dish, nor was it a part of his time. The name was simply used to give the dish an authentic Chinese flair.

The actual creation of General Tso’s Chicken is widely credited to Chef Peng Chang-kuei, a Hunan-born chef who moved to Taiwan after the Chinese civil war. In the 1950s, Chef Peng crafted the dish in Taiwan, blending traditional Hunan flavors with a rich, slightly sweet sauce to appeal to local tastes. When he later moved to New York City and opened a restaurant in the 1970s, he introduced the dish to America. There, it evolved further—American palates leaned toward sweeter, crispier, and more saucy versions, giving us the version many love today.

Over time, General Tso’s Chicken became one of the most iconic dishes in Chinese-American cuisine. It represents more than just delicious food—it tells a story of cultural blending, culinary creativity, and how food can cross borders to become something entirely new.

At our restaurant, we honor this history by crafting our General Tso’s Chicken with crispy, golden-battered chicken, wok-tossed in a bold sauce that balances sweetness, spice, and tang. Garnished with fresh jalapeños and a hint of chili, every bite is both comforting and exciting.

Dear Friends,

Time flies! Budatan Cuisine has now been open for a month and a half. Throughout this time, we’ve received both positive and constructive feedback, and we truly appreciate every comment. Your support and suggestions help us grow and improve, allowing us to provide a better dining experience for everyone.

Many of our team members are students who are passionate about their work and genuinely enjoy being part of our team. While they are still learning the ins and outs of the restaurant industry and may make mistakes along the way, they are eager to improve. Every day is a new challenge for them, and we deeply appreciate your patience and understanding as they gain experience. To support them, we’ve even set up a study desk for after-school use when they’re off the clock, creating a space where they can learn and grow.

At Budatan, we take great pride in the quality of our food. We use only natural meats and flavors—never any MSG or artificial additives. Our sauces are made from scratch using real chicken broth, which takes six hours to prepare, and beef broth, which takes 14 hours to perfect. Some guests have mentioned that our food doesn’t taste as strong as they expected, but that’s because we focus on freshness and authenticity rather than using excessive salt or sugar to mask the natural flavors of our ingredients. When you dine with us, you are experiencing the true taste of high-quality, fresh meats and carefully crafted broths.

As a new restaurant, we are still learning how to better serve our community and grow our business locally. We’d love to hear your suggestions on how we can improve and better connect with the area. If you ever notice a mistake or have any concerns, please don’t hesitate to speak directly with our manager or owner—we truly appreciate the opportunity to address issues and improve our service. Your feedback is always welcome!
