Back from vacation (3300 miles to Vermont and back). Time to get to work. And there is a bunch of it.

I need to do my Uncle Jimmy thing for the Beef Buggy Las Cruces. Final testing of my main contributions. Loose Meat (Maid-Rite, Tavern, Tastee, etc.) ground beef sandwich. Iowa State Fair style Grinder. And for Uncle Jack I need to help him with his Chili, important as a cup or bowl, but maybe even more important as a base for all Beef Hot Dogs.

And of course sides. Iowa style bbq beans, cheesy potatoes and bbq green beans included. And dessert. Dump Cakes that the Lunch Box BBQ Cafe became famous for.

My Iowa Grinders use Grazianos, and usually hot. Not sure just exactly how to get that to Las Cruces, NM for the Buggy. So probably will work on hacking something easily available or making my own. So Grinder homework here I come!! See Food Target in comments.

More research in Midwest loose meat beef sandwiches. Presenting The Charlie Boy.

The famous "Charlie Boy" is a signature loose-meat tavern sandwich invented in 1950 by Charlie Miles. You can find and eat this iconic Midwest sandwich at Miles Inn, a cash-only, 1920s-style dive bar located at 2622 Leech Ave in Sioux City, Iowa.

The sandwich features seasoned, crumbled beef on a bun, topped with pickles, mustard, and American cheese. It is traditionally served alongside a giant frosted glass of beer known as a "Schooner".

Thank God for Uncle Jimmy! His research and development is so important to the Beef Buggy.

Time to revisit Ham Balls. Especially after seeing the video shown as a link in comments. Don't have Kay's Recipe, but will use the one in comments as a Food Target.

And looking forward to making the trip to try hers soon. Bring some of that Iowa Food Love back to Dallas Center.
