This is how Rang’s does a salad.

A shrimp cake over crisp lettuce, finished with sesame dressing and tortilla strips for crunch. It is light enough to start with, but still has enough flavor and texture to hold its own.

For this salmon dish, Chef Rang uses cashews instead of pine nuts because that flavor feels closer to home. It gives the crust a softer richness, something nutty and rounded, without taking away from the fish.

The salmon stays tender, the pesto brings the flavor, and the mashed potatoes keep the whole plate grounded and comforting.

It is still pesto but told through Chef Rang’s memory.

What an incredible honor for us to be included in Las Vegas Review-Journal’s Top 100 Restaurants. 🥳

Three years ago, we opened our doors with a very personal way of cooking shaped by the cuisines we grew up with and the memories that have followed us into this kitchen.
