Summer birthdays are basically a traveling circus because everyone is always on vacation.

Round two of celebrating my daughter Lily turning 12: a cake-decorating party! Talea set everything up and ran the class because she has the skills—and apparently the girls relate better to “young” teachers. I provided the kitchen, paid the bills and accepted my new status as elderly.

Here’s a little sneak peek of what’s coming…

Our 6-inch carrot cake with four delicious layers is loaded with rich cream cheese frosting and serves 8–10 people, so every slice gets the perfect cake-to-frosting ratio.

Made with real shredded carrots and pineapple to keep it incredibly moist. And don’t worry… no raisins here!

The cake itself contains no nuts — walnuts are only on the outside and can be left off if you prefer.

Bonus: you’re technically enjoying your fruits and vegetables while eating cake… win-win.
