No words for how freaking awesome and special Whole Hog was last Saturday.
From building this pit and reminiscing about Roland and the first pit he built in this same style, to processing and cooking the hogs, every part of this experience meant something.
There’s something special about honoring the entire animal and making the most of what it gives us. Every bit of these hogs had a purpose, whether it was meat on your plate, flavor in the beans, or stock saved for another day. Nothing wasted.
A huge thank you to David Dan for sharing his knowledge and guiding us through it, Kurt Bannert for getting up before the sun to cook alongside me, and everyone who came out to eat, hang out, and be part of something special.
Safe to say, Whole Hog is officially a tradition around here. Keep your eyes peeled for the next one!
