Each tea is tied to a memory 🥹 I remember this Wenshan Baozhong on a rainy day in Pinglin… 🍵 When I made the trek out, there was no one there so I took my time wandering past the temple and into a tea shop recommended by a colleague! The tea master there was so friendly and prepared so many grades for me to try 🥲 they insisted in true Taiwan hospitality form that I stay for dinner and made sure that I knew my route back to Taipei 🥲

A big part of tea tastings is the side by side comparison tastings! There’s so much nuance you can get by trying the same tea from different sourcers, different regions, and different grades. 🍵 Try to keep all the factors consistent by weighing your leaves, keeping water temp the same, and using similar brewing vessels! It’s a great reflection exercise to ask yourself which tea you like more and why it may taste a certain way 🙃
