Our 떡갈비 (tteok-galbi) has a story — this is a dish that was once served to kings. Back in the royal courts, short ribs were finely chopped, seasoned, and shaped so the king could enjoy the tenderness of beef without the bone. That same idea lives on today: refined, rich, and meant to feel a little special.
