6 Chicken Breasts...

Place breasts in large ziplock or glass bowl and add marinade... (see below)

If Frozen
ready to cook when thawed

If Thawed
Refrigerate 3 to 5 hrs or overnight

Garlic & Sun-Dried Tomatoes Red Wine Vinaigrette Marinade

* 1/2 cup/120 mL sun-dried tomatoes (packed in oil)
* 1/2 cup/120 mL red wine
* 1/4 cup/60 mL basil (fresh leaves)
* 3 tablespoons/45 mL olive oil
* 2 to 4 cloves garlic (minced)
* 2 teaspoons/10 mL black pepper
* 1 teaspoon/5 mL sea salt

Put in food processor and hit it!!!

PreHeat Oven to 350

In a large pan add a table spoon of olive oil and sauté two large onions..

Add chicken with marinade &

(if cooking rice in same pan you may want to add additional water depending on amount of rice added. I added 1 cup water to a 1 cup brown rice)

& continue to cook over a low to med heat for 5min or until liquid is at a simmering boil.

Finish in oven until rice is at desired texture about 20 min for white 35 to 45 min for brown...

Keep an eye on the water content if not cooking with a high quality pan & heavy lid water can evaporate instead of being absorbed into rice...
