Mongolian Ground Beef Noodles

Ingredients:

1 lb ground beef
8 oz noodles (lo mein, spaghetti, or ramen)
3 green onions, chopped
3 cloves garlic, minced
1 tsp fresh ginger, grated

1/2 cup low-sodium soy sauce

1/3 cup brown sugar

2 tbsp hoisin sauce

1 tbsp sesame oil

1 tbsp cornstarch mixed with 2 tbsp water (optional for thickening)

1 tsp red pepper flakes (optional for heat)

Toasted sesame seeds for garnish

Instructions:

Cook noodles according to package instructions. Drain and set aside. (Duration: 8–10 minutes) 🍝

Brown ground beef in a large skillet over medium-high heat until fully cooked, about 6–7 minutes. Drain excess fat. 🥩🔥

Add garlic, ginger, and green onions to the skillet. Sauté until fragrant, about 2 minutes. 🧄🧅

Stir in soy sauce, brown sugar, hoisin sauce, and sesame oil. Mix well. Simmer for 2–3 minutes. 🌿🍶

(Optional) Add cornstarch slurry to thicken the sauce. Simmer until glossy, about 1–2 minutes. ✨

Add cooked noodles to the skillet and toss until evenly coated and heated through. (Duration: 2 minutes) 🍜

Garnish with sesame seeds and extra green onions before serving. Dig in! 😍🥢

ONE POT LASAGNA SOUP 🍲

Serves: 6-8

INGREDIENTS 🛒
1 pound lean ground beef (or half Italian sausage)
1 yellow onion, diced
4-5 garlic cloves, minced
1/4 - 1/2 teaspoon red pepper flakes
1 (24 oz.) jar Prego Traditional Italian Sauce
8-10 cups low-sodium chicken broth, divided
1 (14 oz.) can crushed tomatoes
2 tablespoons tomato paste
2 teaspoons balsamic vinegar
1 1/2 teaspoons granulated sugar
1 tablespoon dried basil
1 teaspoon dried parsley
1 teaspoon dried oregano
1 whole bay leaf
1 teaspoon salt
1/2 teaspoon pepper
10 uncooked lasagna noodles, broken into approx. 1-2 inch pieces*
1/2 cup heavy cream (optional)**

Cheese Garnish
shredded mozzarella cheese
freshly finely grated Parmesan cheese
ricotta cheese

INSTRUCTIONS📝
Heat large Dutch oven over medium high heat. Add beef and onion and cook, stirring occasionally until beef is browned. Add garlic and red pepper flakes and saute for 30 seconds. Drain off any excess fat.

Add Prego Sauce, 6 cups chicken broth, crushed tomatoes, tomato paste, balsamic vinegar, sugar, spices and lasagna noodles. Bring to a boil then reduce to a simmer until lasagna noodles are tender, stirring occasionally (approximately 20-30 minutes).

Discard bay leaf and stir in heavy cream (optional) and 2-4 cups chicken broth to reach desired consistency. Garnish individual servings with desired amount of cheeses.

NOTES
*You can also replace the noodles with 2 1/2 cups uncooked small shells if desired and simmer for less time.

**If you want to omit the heavy cream but still would like a thicker soup then whisk 2 teaspoons cornstarch with some of the chicken broth and adding to the soup to simmer and thicken.

Million Dollar Spaghetti Casserole 😋

Ingredients
1 lb of ground beef
1 jar of spaghetti sauce
8 oz of cream cheese
¼ cup sour cream
1 cup cottage cheese
½ cup butter (1 stick)
1 pkg spaghetti,16 oz
Grated cheddar cheese

Directions
Preheat oven to 350°.

Boil spaghetti noodles until al dente (firm). Drain and set aside until ready to assemble.

Combine the cream cheese, sour cream and cottage cheese until well blended.

Brown hamburger and when done, drain well. Combine the hamburger with spaghetti sauce.

Put a few slices of butter into a 9×13 pan then pour half of the spaghetti noodles on top.

Pour cream cheese mixture on top of the noodles. Spread well.

Pour the rest of the noodles on top of the cream cheese mixture. Put a few more slices of butter on top of the noodles.

Pour spaghetti and meat sauce on top of noodles.

Bake for 30 minutes. Remove from oven and sprinkle the desired amount of grated cheese on top.

Return to the oven for 15 minutes to allow cheese to melt.

Creamy Mushroom Chicken
Quick and easy - it can be on your table in half an hour.

Ingredients
2 large chicken breasts cut in half lengthwise
Flour for dredging
1 tablespoon olive oil
2 tablespoons butter divided
12 ounces mushrooms (I used baby bellas) sliced
1 dash Italian seasoning
3 cloves garlic minced
1/2 cup chicken broth
1/2 teaspoon lemon juice
1/2 teaspoon Dijon mustard
1 cup heavy/whipping cream
Salt & pepper to taste

Instructions
Cut your chicken breasts in half lengthwise to make four thinner cutlets. Coat them in flour.

Add the oil and 1 tablespoon of the butter to a skillet over medium-high heat.

Once the pan's hot, add the chicken. Cook it for 4-5 minutes/side until golden. Once this step is done, take the chicken out of the pan and set it aside.

Chop the mushrooms while cooking the chicken.

Add the remaining butter to the pan. Let it melt, then add the mushrooms and Italian seasoning.

Once the mushrooms start to release water, add the garlic to the pan. Continue cooking the mushrooms until all the water is cooked off.

Take the mushrooms out of the pan (okay to put them on the same plate as the chicken).

Add the chicken broth, lemon juice, and Dijon mustard to the pan. Give it a good stir until the mustard dissolves, and let it reduce for 3-4 minutes.

Add the cream to the pan, along with the chicken and mushrooms. Let the chicken cook for another 5 minutes or so until it's cooked through and the sauce has thickened a bit. Season with salt & pepper as needed.

Quick Recipe:

• 1 pie crust (store-bought or homemade)

• 1 cup fresh spinach (chopped)

• ½ cup feta cheese (crumbled)

• ½ cup shredded mozzarella or cheddar

• 3 eggs

• Salt & black pepper to taste

Whisk eggs, milk, garlic, salt, and pepper.

I regret I ever came across this recipe. I brought it to a work potluck a while back and now everyone insists that

I bring it every time! I think I'm on the hook for good.Ingredients:

For the filling: Fresh spinach, feta cheese, onions (or green onions), garlic, eggs, herbs (dill, parsley, mint, oregano), lemon zest, nutmeg.

For the pastry: Phyllo dough (or puff pastry), melted butter or olive oil.

Instructions:

1. Prepare the filling:

Sauté onions, green onions, and garlic. Add spinach and herbs, cooking until the spinach wilts and excess liquid evaporates. Let cool, then mix with crumbled feta cheese, beaten eggs, lemon zest, and nutmeg.

2. Assemble the pie:

Layer sheets of phyllo dough in a baking pan, brushing each layer with melted butter or olive oil. Spread the spinach and cheese mixture evenly over the phyllo layers. Top with more buttered phyllo layers.

3. Bake:

Bake in a preheated oven (around 350°F or 175°C) until golden brown and crispy.
