⭐Spicy Vegan Pumpkin Ramen with Lahtt Sauce⭐⁠⁠

Always amazed by how innovative our customers are with Lahtt Sauce in their kitchen. Throwing it back to this unique pumpkin broth ramen recipe by ⁠⁠
⁠⁠

"The pumpkin puree I made the other day is versatile as a soup base. The garlic, toasted sesame oil and scallions simmer first then mix with the earthy pumpkin purée. Add your liquids and bring to a boil then lower to a simmer. Blend well with an immersion blender or stand alone. I added some coconut oil and butter for richness and a good amount of vegan chili paste from . I really love this brand and their vegan chili oil is made from shiitake mushrooms.⁠⁠
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠⁠
I like to cook my veggies and noodles separately and then pour broth over top but you can easily add everything to one pot and bring to a boil and then simmer. Serve hot, top with scallions, sesame seeds and lime.⁠⁠

Pumpkin Ramen Broth Recipe: Serves 4⁠⁠
-1 1/2 cups pumpkin puree⁠⁠
-3 1/2 cups vegetable broth⁠⁠
-1 cup unsweetened almond milk⁠⁠
-2 tbsp vegan chili oil⁠⁠
-4 tbsp low sodium shoyu or 2 tbsp of soy sauce⁠⁠
-2 tbsp toasted sesame oil⁠⁠
-1 tbsp coconut oil⁠⁠
-2 garlic cloves minced or grated⁠⁠
-2 chopped scallions, use the white ends for broth and green pieces for plating⁠⁠
-2 tbsp of butter (optional)"
