🌈 Today marks exactly one year since Chimi left us.

💕 Of course we have countless pictures of her, but we chose this one because it’s probably our favorite ever. We simply love how happy and adorable she looks.

🫤 We don’t think there is a way to express how much we miss her, and it’s also difficult to explain how a little chubby dog with short legs changed so many things in our lives without ever saying a single word.

🙂 But her impact goes beyond that.

🐶 Because of Chimi, we later adopted Chori and, after she passed, Mila. We’ve also been making donations to animal rescues in her name to help keep her memory alive. So even though she is no longer physically with us, she’s still helping other animals in need.

🎁 This year, to properly honor her memory, we wanted to make a bigger donation. If you’ve recently visited the store, you’ve probably noticed that we’ve been raising funds through our Chimi Memorial Fundraiser and, to thank our friends and customers for their support, we’re also hosting a sweepstakes.

⚽️ Since the World Cup began, we’ve been working on a series of recipes inspired by the four countries making their World Cup debut.

🗓️ For the next month, our goal (pun intended) is to release a special World Cup flavor every weekend.

🇺🇿 The first flavor in our World Cup Gelato Series takes you to Uzbekistan. Inspired by the ancient trade routes that connected Central Asia with the rest of the world, we named it Silk Road Apricot.

🍑 Uzbekistan is famous for its dried apricots, which have been preserved and enjoyed throughout the region for centuries. That’s why we chose dried apricots rather than fresh ones for this recipe.

🍯 The gelato base features a delicate touch of honey that reveals itself gently on the finish. We then add roasted almonds, bringing a warm, subtle nuttiness that pairs naturally with the rich apricot flavor.

🥛 While all of our fruit flavors are typically sorbets, this time we made an exception. We incorporated milk to reflect the strong dairy traditions of Central Asia, where milk-based foods and drinks have long been a fundamental part of everyday cuisine.

🌰 A couple of weeks ago we introduced a new flavor, Nocciolato: think of it as a deconstructed Gianduia because hazelnut and chocolate are not mixed together. Well, they are together but separated. Makes sense, doesn’t it?

🧑🏻‍🍳 But that’s not all: to make it even yummier we added chocolate shavings to the hazelnut gelato and roasted hazelnut pieces to the chocolate gelato. Double crunch!

🤩 It’s now available again!

🌱 This flavor is completely vegan and it’s made using Piedmont hazelnuts and French dark chocolate. Two of our finest ingredients combined together.

🫠 Lately, we’ve been so busy that we completely forgot that yesterday, June 4, was International Corgi Day...

🦊 We’re one day late, but we’d still like to share a picture of Chori and Mila because we really can’t imagine our lives without them.

😅 They’ve also become part of our gelato shop. It’s kind of funny when we see customers almost disappointed when they’re not there.

🌈 And of course, a special thought goes to Chimi. Soon it will be her first anniversary, and we’ve been thinking about how to honor her.

🤪 This week we played a little with “flavor separation”, so we basically made some custom dividers that go inside the carapina (the stainless steel tub) and help us maintaining the gelato in a certain position, just like it’s shown in the second picture.

🌰 The flavors we chose to combine are hazelnut and chocolate, this is basically a deconstructed take on this classic combination.

🧑🏻‍🍳 The separate alternating sections allow each flavor to express its own character and when scooped, they come together naturally, creating a unique balance of flavors and textures.

😋 But that’s not all: chocolate shavings enrich the hazelnut gelato, while roasted hazelnut pieces add crunch to the chocolate gelato, resulting in a delicious combination of creaminess, texture, and rich roasted notes.

🌱 This flavor is completely vegan and it’s made using Piedmont hazelnuts and French dark chocolate.

🍫 We chose to call it Nocciolato, it would translate as Choconut.

🎂 Few days ago we celebrated our 9th wedding anniversary (😱) and we know that some of you have been waiting for this moment because it means the Italian Wedding Cake flavor is back!

🗓️ It’s one of the two flavors we only make once a year because it really means something to us.

🧑🏻‍🍳 For those who don’t know about this flavor, to celebrate our wedding anniversary, we created a flavor inspired by the traditional Torta degli Sposi (wedding cake) and the beloved Italian almond confetti, or Jordan almonds.

💕 Why almonds? In Italian weddings, the sweet sugar and the bitter almonds symbolize the sweetness of love and the bitterness of life. The confetti are usually given in groups of five, representing happiness, health, longevity, wealth, and fertility.

5️⃣ To honor this tradition, we used almonds in five different ways: natural almond extract in the base, almond flour cake soaked in almond syrup, marzipan pieces, and toasted almonds on top, all nestled in a creamy, delicate custard base.

📣 After yesterday’s behind the scenes video, it’s now time to officially announce our latest flavor: English Toffee.

🧈 A rich, buttery gelato inspired by classic English toffee confectionery.

🧑🏻‍🍳 Our base is made with a homemade toffee cooked slowly with butter and sugar until golden and aromatic, developing warm notes of caramelized sugar, buttercrunch, and toasted dairy.

🍫 To complete the flavor, we add shards of milk chocolate coated with roasted almonds, folded into the gelato for a delicate crunch in every bite.

👀 Curious fact: English toffee is a bit of a culinary misnomer. While the treat is rooted in British candy-making traditions, the specific, nutty, chocolate-coated version known as “English toffee” is actually an American twist on the original classic.

👌🏻 Final touches for one of our weekend’s specials: Amarena.

🍒 Amarena is a classic Italian-inspired flavor made with fiordilatte gelato and swirled with homemade dark Amarena cherry syrup.

🧑🏻‍🍳 The result is a creamy base balanced by the deep, slightly tart sweetness of Amarena cherries, creating a rich and fruity flavor with a naturally intense cherry aroma.
