On Earth Day
Sustainability is not an addition to our work, it is a foundation of it.
Before opening in 2011, we committed to practices that respect the land, support our community, and minimize waste. Since 2010, our garden has guided both our menus and our thinking, connecting us directly to the ingredients we serve. The team at Farmscape helped us further develop our space to create a thriving ecosystem that inspires us season after season.
Each harvest is used with care and intention. This approach carries through the kitchen, where ingredients are fully utilized, preserved, or reinterpreted over time. Nothing is considered in isolation, and nothing is without purpose.
Our menu is rooted in California, shaped by seasonality and proximity. We work closely with local fishermen and farms, with nearly ninety percent of our produce sourced nearby. These relationships allow us to remain grounded in place while continuing to evolve.
This commitment extends beyond the plate. During our remodel, existing materials were repurposed into new furniture and service pieces, allowing us to preserve what was already here.
Today, and every day, this work continues.
