Does your business need a consistent source of Opah? Here at Prime Time Seafood, we always run into quality Opah. This fish has a semi firm consistency that stands up well to most sauces once it is cooked. Our Opah is caught locally (West Coast) and has a great shelf life. Give us a ring if you are curious in trying out a rack or two. ⠀

We had the opportunity to visit ‘s production in La Paz, BC Mexico 🇲🇽

We are proud to carry such a quality fish! They have built a clean process from egg to harvest. More pictures and video coming out soon.

What’s happening in these pictures?

1. Net out the exact amount of fish from presold orders.
2. Sort and select the correct sizes (small fish are released back into the fish pen)
3. The fish undergo an ikejime harvest method aka live nerve kill (Quickest and least stressful harvest method for the fish)
4. Dropped into an ice slurry and off to the processing plant.

This whole process takes a minute and a half... 🤯🤓
