We have always had a love affair with Korean Food. From stir fried dry squid, Kimchi, crabs with chilli, sesame seaweed, marinated cucumber, preserved radish and of course “Soon doo doo jigae”, a shellfish soup with silken tofu and red pepper, we say to you Jal-meok-eo (잘 먹어) - “Eat well” or “Eat plenty”.

Last night was one of those evenings we will not forget for a long time.

These guests have been with us since the beginning. They keep coming back, they bring their people, and they trust us with their tables. So when they sat down last night expecting 5 courses, we quietly decided to give them 10.

Course after course, Kashmir to Kanyakumari. Our way of saying thank you for believing in what we do here.

The food, the laughter, the stories that came up around the table. This is exactly why we started Bond Appetito.

Stay tuned. There is a lot more to come.

Last night’s 10 courses

1. Pani Puri
2. Nadur Monje
3. Hyderabadi Lamb Seekh Kebab
4. Pithore Ki Sabzi
5. Goan Prawn Fry
6. Tomato’r Tok
7. Vasai Pork Vindaloo
8. Menthi Majjiga
9. Beef Nihari
10. Kavuni Arisi

We are thinking about making the 10-course tasting menu a permanent part of what we offer. Would you want to experience this?

In the meantime, if you want to attend an amazing 5-course dinner experience, hit the Reserve button on our profile and book your seat through OpenTable!

What’s cooking under this tower of pots? Swipe to find out!

Biryani is a Mughal-era Indian dish, but it is thought to derive from a Persian rice dish, either pilau or birinj biryan.

The dough-sealed pot is the heart of Dum Pukht (Persian for “slow breathing” or “maturing”). Originating in the 18th-century royal kitchens of Awadh, this technique was famously used by Nawab Asaf-ud-Daulah to feed thousands of laborers during a famine. By sealing the lid with dough and placing weights (those extra pots!) on top, an airtight “pressure cooker” environment is created, forcing the steam to circulate and infuse every grain with the essence of spices.

As we cut through the Pardah (the “veil” or dough curtain). This is the exact moment the “Dum” is released. Historically, this “opening of the vault” was the ultimate test of a chef’s skill; the trapped aromas are so intense they can fill an entire room instantly.

To complete the experience, it’s served with a side of Raita, from the Sanskrit “Rajika”. It was designed to balance the palate and aid digestion after such a decadent meal.

Today we celebrate and thank our veterans for their service. Happy Veterans Day!

Just last Friday, we had the honor to meet some wonderful people who participated in our 20-meal donation initiative. The very first one was a neighbor who drove all the way to El Segundo to bring the meal to her retired 86-year-old marine veteran father, who, despite serving his country with honor, is still struggling to pay the bills and relies on his wonderful daughter for any help he can get.

After dinner, she sent us the most beautiful message saying that her dad loved and ate every little bit, and he was so thankful and happy. That to us was the most precious moment. It made us appreciate what we have and what we can do to help others who are struggling.

This is the spirit of Veterans Day: the will of the people who were willing to sacrifice everything to give us a better future, putting others’ interests above their own.

Giving is the gift that keeps on giving.
