Beyond Beef Vegetarian Chili Recipe

Ingredients
1 onion, 1/3” dice
4 carrots, 1/3” dice
2 yams, 1/3” dice
5 Roma tomatoes, 1/3” dice (or 1 14 oz can diced tomatoes)
3 garlic cloves minced
1 or 2 lb. beyond beef, chopped during sauté
1⁄4 tsp- celery salt
2 Tbsp- cumin
2 Tbsp- chili powder
2 Tbsp- paprika
3 Tbsp- onion powder
1 Tbsp- garlic powder
1⁄4 tsp- cayenne pepper
1⁄2 tsp- nutmeg
1 1⁄2 tsp- salt
Whole Cans:
6oz can green chili
14 oz kidney beans
14 oz pinto beans
6 oz tomato paste
14 oz diced tomatos
2 Tbs - maple syrup
4 Tbs - Fresh OJ (2-4 more if needed)
3 cup- chicken broth
8 oz- tomato sauce
2 dashes Worcestershire
2-3 cups water (after 1 hr. cook too thick, add if needed)
Tortilla Chips (for dipping, optional)

Cooking
1. Prepare the Ingredients; Carrot, Yams, Onions 1/3” dice. Mince Garlic. Measure Spices. Open whole cans.
2. Sauté Carrot, Yams, Onions with salt and pepper. Remove from pan and set aside
3. Sauté Beyond Meat, mash into small pieces, (do not caramelize will be too hard, better with simple saute)
4. Bring all ingredients in large pot to a boil, then simmer for 2 hours. After 1 hour add 2 cups of water if too thick. Add additional 1 cup of water if needed.
5. Taste test, if needed add 2-4 TBS of OJ.
6. Serve in Bowl with Tortilla Chips for dipping

I met Esmee St James after I read her book. Esmée A St James wrote the book to help men be all that they can be for the special someone (on the NY Best Sellers list for 4 weeks). An amazing creature. Esmee wrote her Book after she move to US from Scandinavia worked as a top Broadway Model in NYC, then moved to Los Gatos CA blessing everyone with her love and grace. Esme literally changed my life. She was like a big sister and an angel to everyone she met. Regrettably, Esmee passed away from Pancreatic Cancer in June breaking my heart and so may others. I had the honor and pleasure to attend Celebrating the Life of Esmee St James event this Sunday. Hearing so many touching stories and seeing how this angel touched so many lives. My recommendation, Men buy her book, practice her teachings, pass it on to a friend. Ladies, buy the book for your son. They will thank you!
For me....I will be start every day by saying "Today is an Esmee day", honoring my friend and doing her proud. God Bless everyone.

Please read this if you plan on going to a place that has outdoor seating!

1. Try your best to ask for everything you need at once. Remember it's going to be a long walk from the outside dining deck into the building for more water or anything else. Help us out by asking all at once.

2. No mask jokes or your views on them. The server has to wear it. They have no choice and really your opinion of them while you're eating not wearing one means nothing to them.

3. Wash your hands while dining. The server is wearing the mask to protect you

4. You Eat....You Go....
Eat your meal. Have some drinks but please do not sit at a table all night unless you continue to spend money. The restaurant is working with very limited space.

5. Don't come out if you're sick.

6. Social distancing. Keep your kids at the table. Yes. They're cute but if they are running around they are getting too close to other people.

7. Everything may be a bit slow because this is basically a new job for everyone. Be kind. Smile.

8. Tip. They are going to be sweating wearing masks all to make a buck. Please treat them right and leave a decent tip. If you can't afford to tip you can't afford to go out.

9. Be pleasant, be happy. You're finally out dining a Billy's

10. Realize that our staff is doing their best.

11. Relax and enjoy your meal
