Kalbi Spam Kimchi Fried Rice 🥩🔥🍚
This is what happens when local-style comfort food meets the grill — marinated kalbi, crispy cubed Spam, funky kimchi, cold rice, and that hot griddle flavor all coming together on the Monument Grills Denali 605Pro.
For the kalbi, I used my umami marinade of shoyu, brown sugar, miso, ginger, garlic, and chili flavor before slicing it up and mixing it into the fried rice. The beef, Spam, and kimchi together is unreal.
Kalbi Marinade:
1/2 cup shoyu
1/4 cup brown sugar
2 Tbsp miso paste
2 Tbsp minced garlic
1 Tbsp grated ginger
1 Tbsp sesame oil
1 Tbsp rice vinegar
1 Tbsp honey
Thai chilies, optional
Thin-sliced beef or kalbi-style beef
Fried Rice Recipe:
2–3 cups cold cooked rice
1 can The SPAM® Brand , cubed
1 cup kimchi, chopped
2–3 Tbsp kimchi juice
2 Tbsp shoyu
1 Tbsp sesame oil
1 Tbsp butter or cooking oil
Melinda's Hot Sauce gochujang
Melinda’s sriracha
2 eggs
Green onions
Instructions:
1. Mix your kalbi marinade and marinate your beef for at least 30 minutes, but overnight is even better. In my Drip EZ | BBQ & Meal Prep Tools prep tub
2. Fire up your Monument Grills Denali 605Pro and get your griddle hot.
3. Grill your kalbi until you get a good char, then chop or slice it into bite-size pieces.
4. Add your cubed Spam to the griddle and cook until the edges get crispy.
5. Add in your chopped kimchi and let it cook down with the Spam.
6. Add your cold rice and break it apart on the griddle.
7. Mix in the chopped kalbi, kimchi juice, shoyu, sesame oil, and any extra heat if you want it spicy.
8. Let the rice sit for a little so it gets those crispy edges.
9. Push everything to the side, scramble your eggs, then mix it all back together.
10. Finish with green onions, furikake, and enjoy.
