Benito Mussolini’s fascist totalitarian lead Italy became so bad, it caused a mass exodus from the most scenic, agricultural and architectural country in the world. Now I ask ya, if things are so bad that you’re literally fleeing the most beautiful country in the world, do you think meat and poultry would be readily available?
When these Italian immigrants landed in the America’s, where poultry and meat are plentiful, they cooked what was available to them(the true definition of Italian cooking.)
So in my personal record book: Italian people, using Italian cooking methods, on the resources available to them, is authentic Italian food.
