At our core is a commitment to locally sourcing our food from conscientious, small, local farmers and creating our beer with an emphasis on quality and caliber over quantity and quota, spending time perfecting recipes to bring the best to your plate as well as your glass.
Beginning next week we will be bringing you our Meet our Farmer's series, introducing you to the hard working farmers that we work with directly, to bring you an authentic Farm to Table experience at Republic.

💜💚Well this has been a long time coming!💜💚
It's Pete here, I wanted to tell you briefly how my new business partner and I came to name our upcoming Brewery & Restaurant, "Republic Brewing Company" (Republic Brewing Company). The original business plan was built around a different name and just days before we closed Campo Enoteca on New Years Eve 2022, I approached my partners, mentors, and two of my most steadfast supporters, teachers, and favorite people (likely yours too!) Ed Aloise and Claudia Rippee I asked them if we could carry on the Republic name in the form of Republic Brewing Company, the new venture of myself and Mike Brown (founder of Hometown Coffee Roasters). 📣We wanted to take a moment to officially announce the creation of Republic Brewing Company and introduce ourselves. We are Mike Brown founder of Hometown Coffee Roasters and Pete Macone, former partner at Republic Cafe and Campo Enoteca restaurants. We are both excited to announce that we will be partnering to bring Republic Brewing Company to 72 Old Granite St. located in downtown Manchester, NH. After multiple years of planning we are eager to bring you carefully and consciously crafted beers, with the emphasis on quality over quantity and farm to table dining. Our menu will feature local animal proteins as well as providing vegetarian and vegan offerings. We are working effortlessly to create a unique to Manchester environment in our 7,500 square ft space. We can’t wait to welcome you later this year. In the meantime please follow along on social media for a sneak peek into our progress and ongoing updates into how we will bring beer to your glass and food to your plate 🍻

A Message From Ed Aloise:

From Cafe Pavone, The Milltowne Grille, Republic Cafe and Bistro and Campo Enoteca we thank you for allowing us the opportunity to express ourselves. Thank you for your support and patronage. Thank you for your friendship. We will spend January and February preparing the facility for its eventual sale. March will find Claud and I in Paris celebrating our 40th wedding anniversary. Upon our return Claudia will be focusing on her photography and the different art organizations that she is both an active member and officer. Come spring will find her putting order back in her garden. I will be resurrecting my blog with recipes, cooking tips and general world outlook along with information about pop up dinners and future cooking classes, so tell your friends to sign up in the next few weeks. Also join me in wishing Peter good fortune with his plans for a downtown brewery and restaurant in 2024 and thanking him for being the driving force that managed your experience and both Republic and Campo Enoteca .
Half of my life has been spent in the dining rooms and kitchens here in the city. I will miss that, but it is time. It is time to begin the next phase of my life, what ever it my be. Please stop by in the next weeks to say hello and share what memories you have with us. With deep affection and gratitude I say see you soon.
