A lot of commercially produced Olive Salad mixes don’t use pure Extra Virgin Olive Oil, they use a blend of olive oil, Canola and or vegetable oil.

Another thing they do is the only fill the jar with the salad about 2/3rd full then fill the rest with the cheap oil.

As you can see, our jars are filled to the top with the salad mix then we let the olive oil displace whatever air is in the jar.
