Tucked away in the sleepy little town of Matawan, NJ at 106 Main Street is Papa Ganache. We are a vegan bakery, also producing vegan/gluten free baked and savory items in a dedicated vegan/gluten free kitchen. We offer amazingly delicious treats baked in small batches that are cholesterol free, containing no trans fat, dairy, eggs, no preservatives, no animal products, all natural and mostly orga

nic. We are NOT a nut free facility, but offer numerous soy and nut free products. As we share a kitchen with soy & nuts we want you to know that despite our best efforts cross contact is possible. If you have an inquiring mind and want to know, we sweeten our baked goods with organic, evaporated cane juice and agave nectar. Meet Coco!

Coco is the Head Baker of Papa Ganache presently heading up the gluten-free kitchen. Coco has been with us for over eight years and his growth and development is a credit to his commitment and dedication to this place.

Coco is my creative partner in putting together the amazingly delicious vegan and vegan gluten-free sweet and savory treats. I can't say that other staff isn't a part of that as they certainly are but Coco and I spend endless hours talking about this place, what we can do, what we should do, what we shouldn't do. Without him I'm not quite sure where we would be.

Not only committed to Papa Ganache, Coco is dedicated to his family, friends, husband and two dogs who he loves more than anything. He loves loves days at the beach, dining out having great food and being a part of my newest adventure.
He has a passion for teaching and is also a wonderful educator and started the baking & cooking classes at the gluten-free kitchen. He is loved and adored by his students for his sense of humor, skill, personality and professionalism.

He doesn't believe that air conditioners should break or Equipment should fail or people should make a lot of mistakes. He has high standards and a work ethic that is seldom seen.

He came from the Philippines when he was 18 years old and learned culinary in the kitchens of five star resorts throughout the country. How lucky are we to have him settled in the sleepy little town of Matawan.
