In with new!

And reverent about the old.

Why so in the feels about a piece of equipment?

Because Sweaty Betty holds a story about how we arrived and the paradigm in which we operate.

We opened after enough doubt and with no outside financial support. This flat top was purchased with a donation to a local camp, already long past its prime and without much ability to repair. It was all we could afford and matched the donated fryer, refrigeration and forgotten mismatched tables just fine.

Friends that continued to show up got the impossible and ridiculous piece of equipment through the door. Despite the obvious causes for alarms. With a smile and a can do attitude.

Because they believed in what a business plan could not explain.

And we worked. Hard. With a more than half broken piece of equipment and along side humans with saintly patience. Baked cookies and puddings without a temperature gauge, struggled multiple times a day with the grease drippings from slapping hundreds of burgers and flipping bacon every single morning (making sure rags were placed just right to avoid a disaster), relighting the 2 out of four burners that worked as we juggled soups and beans and sautéed specials. Lovingly cleaned each night and spoken to sweetly as she kindly kicked back on.

And although some hands that carried that pile of metal out have changed, as life has both taken too soon and also provided new in abundance, we will remember the lesson.

She was a source for saying yes. Not an excuse for defeat.

Whelp! The (poorly situated) time has come. Sweaty Betty will retire. And we will welcome a new era of bread toasting, burger searing, chicken grilling, cookie baking, soup simmering and bacon sizzling.

Unfortunately this is a more nuanced process than an hour or two. But we will be back Friday all shiny and new.
