Vietnamese beef stew, known as Bò Kho, is a fragrant and hearty dish characterized by its deeply aromatic broth infused with lemongrass, star anise, and cinnamon. Unlike Western stews, it has a thinner, soup-like consistency and is often served for breakfast.
Essential Ingredients
Beef: Tender cuts with connective tissue like beef shank, chuck roast, or brisket are preferred. Many traditional recipes also include beef tendon for a unique, gelatinous texture.
Aromatics: The soul of the dish comes from lemongrass, star anise, cinnamon, ginger, and Chinese five-spice powder.
