Diners get their name because they evolved from repurposed railway dining cars and factory-built "lunch cars". Originally, they were horse-drawn food carts that later adopted the elongated shape, stainless steel finishes, and layout of passenger train dining cars to capitalize on the glamorous dining experience.
While Kirby G's is a stationary brick-and-mortar restaurant rather than a prefabricated railcar, it intentionally channels the design, food philosophy, and cultural legacy born from the original dining car era.
